13.5% alc. Dijon clones 777, 667 and 115 from the Bendigo region on sandy loam. Fruit destemmed, given a cold soak for 5
days, max. ferment temp. 32º C, 8 months in 33% new French oak. Deep purple hued ruby red, youthful in
appearance. Fresh, elegant cherry-berry
nose, bright and vibrant with minerals and thyme herb elements. Bright dark cherry fruit flavours on palate,
this has real concentration, firmness
and concentration. There is a
richness, but also a steely, mineral and crisp acidic edge. My score 18.5-/20 RC Nov 07
