CJ Pask ‘Declaration’ Syrah 2007 (18.5-/20) at 14.5% alc, came from the ‘Settlement 2’ block, the wine finished fermentation in barrel, and aged 14 months in new French oak, with lees contact. Dark, deep, black-hued red, this had a complex bouquet of savoury dark berry fruits with nuances of meat and game running into toasty oak, and leather. Quite dense on the nose, the weight and depth also came through on the palate. This was packed and concentrated with black, savoury fruits, spices and black pepper and oak toast, all on a fine-grained, tightly tannic structure, providing elegance. The flavours unfold in the glass. One to drink over 7-8 years and more.  RC May 10

"Declared” as our best Syrah from the 2007 vintage, from our Settlement 2 Block within our Gimblett Road vineyards. Truly expressive, ripe clean fruit.
Colour: Deep purple/red.
Aroma: Intense spice and pepper
Palate: A rich mouthfilling Syrah. Complex oak and intense peppery fruit notes combine. A powerful, elegant attractive Syrah, with subtle underlying fragrance.
Oak Maturation: Approximately 14 months in new French oak.
