Rich and fruity, tart and tannic.\u003c\/p\u003e\u003cp\u003eIn Wallonia, southern Belgium, the famous beer style is a farmhouse Saison; often the most difficult style to describe, because the 'farmer brewers' use whatever grain may have been surplus at harvest time and a fermentation I that differs from the norm. This beer was inspired by our trip to Liège (a truly fascinating city) and the delicious fruit syrup used in their cooking. We brewed an ale using French Saison yeast, then put it into two large puncheons for a further fermentation, along with some souring microbes and wild yeasts, to which we added our homemade Liège Sirop.
