JACQUES LASSAIGNE LES VIGNES DE MONTGUEUX
All of Lassaigne's wines are 100% Chardonnay (blanc de blancs), with no dosage. Technically this makes them brut nature, although the new winemaker Emmanuel, Jacque Lassaigne's son, prefers to label the larger-production cuvées as extra brut as the term is better known. The wines have low carbonation levels thanks to the zero dosage and all bottles are able to be disgorged by hand without any topping up.
All of the wines spend an extended time in the cellar, as much as 10 years before release.
