Solstice is a joint creation by an uncompromising cidermaker and brewer, and parT of our ongoing exploration into "what cider can be".  

When Alex discovered a couple of Quebecois cidermakers using artisan maple syrup evaporator to make a fire twin their ice cider, it was something he had to try.  Jason's Vermont roots in the heart of US maple country gave their collaboration additional meaning.  This very limited release is the result of a long day stoking an intense pear wood fire under bubbling steaming cider apple juice to create a rich caramalised must, followed by a slow wild ferment in oak. 

Wild fermented (on the lees of our Brown's apple cider) and matured in oak for 10 months. Bursting with intense toffee apple and named for the winter solstice, this is a warming winter cider.

, the longest day of the year, this is a mid-winter celebration! This cider warms the soul and is a blend of wood fire caramelised Kingston Black and Sweet Alford, balanced with a selection of aged, wild fermented ciders.
