Unit price perJim Barry's Clare Valley Assyrtiko (pronounced 'As-err-teek-oh') comes from 15 kilometres south of Clare township in the village of Watervale on the Florita Vineyard, best known for fino sherry prior to 1962 and great Riesling ever since. A small block of this elevated vineyard is devoted to the Assyrtiko grape, which originally comes from the volcanic island of Santorini where hot days and cool nights allow it to retain freshness derived from the grape's naturally high acidity. This pre-made bottled Bellini is made with sparkling wine and peach nectar. It has a wonderful bold flavour of peach, which is present on the nose and carries through on the palate, offering a soft creamy texture with the gentle fizz. The flavours are delightful on the taste buds and linger slightly. A delightful way to begin a meal.
Process
Grapes were machine pressed. The pressed juice was then chilled and allowed to clarify for 3 days. The clear juice was racked off lees and transferred to the fermentation tank. The lees were filtered and combined with the rest of the juice. The juice was warmed to 15 degrees celsius and yeast added. The ferment was complete after 17 days and kept at 17-18 degrees and allowed to warm to 20 degrees towards the end to ensure completeness. The base wine was then cold stabilised and filtered, now ready to be converted into a Bellini.

Unit price perThis wine was fermented using only indigenous yeasts, natural to the vineyard, allowing for excellent terroir expression. Lees ageing and regular batonnage for 10 months has increased the complexity and creaminess of the wine and further heightened the palate weight.
The nose shows apricot, honeysuckle and orange zest aromas. The palate offers a long, luscious texture and notes of orange zest, with a touch of honey and toast. A long, rich and luscious palate finishes with a citrussy freshness.
