El Dorado 21 year old is made from rums of between 21 and 25 years of age, matured in 45 gallon oak casks, within six degrees of the equator in Guyana. El Dorado 21 was awarded a Gold at the International Rum Festival 2003 in Canada and a Silver at the 2003 International Wine and Spirit Competition in London. Most remarkably, this was the highest scoring rum ever to be tasted by the Beverage Tasting Institute in Chicago.
The nose is buttery, with chocolatey notes of Rolos behind it. Ripe banana and fruity Christmas cake. Hints of tobacco and sandalwood, leading into spent match smokiness. Sultanas, dates, blackcurrant and macadamia nuts on the palate. A touch of rosewater, too. The mid-palate brings dark chocolate and nutmeg too.
The finish just keeps going! There's fried banana and handfuls of raisin notes right through to the end, with just a little hint of spicy cinnamon.

Nose: Dried fruit, dried pineapple, banana, walnut, treacle, vanilla and oak.

Finish: Spicy, rich oak and espresso.

TASTING NOTES:
Aroma: Bright citrus at first with a noticeable but well integrated spicy oakiness. Less herbal than the silver.
With time the earthier notes come through and a definite roasted coffee note.
Palate: The wood sugars have played their part and have married beautifully with the warm orange and oak. Baking spices dominate the mid palate with a pleasing silky mouth feel. This develops into coffee, chocolate and generally ruminess that combine with wood tannins to give richness and structure. Pleasant lingering heat on finish.
APPEARANCE:
Light gold, similar to a Fino Sherry or an aged Chardonnay.

Unit price perDictador XO Insolent Rum is made from the fermentation of unique virgin sugar cane honey, then distilled in a modern stainless steel alembic. It is then aged in pre-used quality oak barrels from Jerez and Port that now and again reburn to caramelize the interior to achieve sweet flavours coming from the oak.
In the mouth it is extremely smooth with a range of exquisite flavours starting with fudge, intense vanilla, parfait caramel, and Colombian coffee. A long consistency is balanced with light oak giving the sensation of extreme quality and satisfaction of sweetness and strength.

NOSE: A very special Saint James with an unusual sweet fruity dominance (fig, dried date). The classic notes of very old Saint James follow on in the background with fine smooth notes of undergrowth, roasting (mocha) and spices.
PALATE: A lively woody attack which quickly becomes warm and rich. Dominant fruit which lingers on notes of fruit brandy (cherry, prune).
