Dolin Vermouth de Chambery is made of fine wines and botanicals found in the Alpine meadows above Chambery. Together they impart a fresh and elegant nose, with a subtle and complex palate. Tasting notes: Dolin Vermouths are notably lighter, drier and less pungent than their larger commercial counterparts. The particular mixture of plants found near Chambery gives a fresh, restrained and elegant nose, with a subtle, complex bittersweet palate. Even the Blanc and Rouge retain great balance, with the sugar never cloying, and just enough bitterness to whet the appetite. Unit price per2.5 bar in the name of this wine refers to the pressure, which is half of the pressure in bottle fermented sparkling wines, giving this cheeky little quaffer a superb yet subtle spritz. Sun ripened strawberries on the nose lead to a feather light palate with similar red berry flavours. Ethereal and bubbly!
The vineyards selected for this wine are Huia Rapaura vineyard and Rose family Kennedy vineyard.
The grapes were hand-harvested, whole bunch pressed. Juice was racked off to barrels for fermentation where a warm, fast ferment was encouraged. Base wine underwent full malolactic fermentation. Aged on gross lees in neutral French oak for 14 months. Wine is put on tirage where yeast and sugar is added before bottling. Second fermentation occurred in bottle and the wine aged on lees for a further 20 months. Hand riddled over 5 weeks and disgorged on 6th December 2021.

Smell: Strawberries, cherries and baked bread.
Taste: Fresh, wild strawberries and strawberry shortcake with a crisp finish.

Unit price perRose is on a rise and this one was made entirely from Pinot Noir grapes grown on two vineyards in Bannockburn; Muirkirk and Felton Road.
Lively, refreshing, dry and light in body as well as colour which comes from gentle whole bunch pressing over five hours to retain a little colour. The juice was fermented in stainless steel at ambient temperatures with wild yeasts, which add a savoury tang to the fresh summer berry flavours of strawberries and raspberries, intertwined with the freshness that gentle acidity brings to this wine.

It has a combination of natural sweet and sour flavors without the use of any additives. It is a sparkling sake made with "Yume no kaori" (name of rice from the Fukushima prefecture) and ancient "Asamurasaki" black rice. Due to the highly nutritious anthocyanin found in the black rice, it was considered to be the "rice of longevity" and was given to the Chinese emperor in ancient times. Winemaking
Crafted in the heart of the Jura, Domaine Maire’s Grand Minéral Chardonnay is made using fruit from clay and limestone soils that lend natural tension and minerality. The 2021 vintage is vinified without oak, allowing the purity of Chardonnay and Jura’s terroir to take centre stage. Fermented and matured in stainless steel with extended lees contact, the wine combines freshness with a gentle savoury depth.
Bouquet
The nose is clean and expressive, showing green apple, citrus peel and pear alongside subtle notes of almond, white flowers and crushed stone.
Palate
Bright, textural and dry, the palate delivers zesty citrus, crisp orchard fruit and a chalky mineral core. A subtle nuttiness lingers beneath the fresh fruit, balanced by vibrant acidity and a long, saline finish. Elegant and refreshing with a distinct Jura edge.
