Spelt Saison brewed into large format neutral French oak barrel on a mixed culture of yeasts. Aged in barrel for 14 months and conditioned in bottle for 6 months before release. A slightly nutty, bready, and crisp malt base with a fresh floral and faintly earthy nose. A touch of bitterness to balance out, and a tart spelt rusticity. This beer is complex, fun, and made to share.

The second iteration of Perpetual, our spontaneously fermented
barrel aged sour beer, finished on raspberries. For this beer, we
selected two barrels of spontaneously fermented (Méthode
Traditionnelle) beer from the 2020 and 2022 seasons. We then let
this blend re-ferment with 400g/L raspberries for a further 10
months before packaging.

For this beer, we blended three barrels together to make an amber
mixed ferment sour base. Two barrels were an amber mixed ferment
saison and one barrel was a spontaneously fermented sour ale. To
this blend, we added 450g/L of whole peaches, nectarines, and
apricots. The result is a complex, funky, tart, and fruity beer
with supporting structure from the oak barrels.

This imperial strength rye blond, aged for three years in freshly emptied American bourbon barrels, pushes the boundries of what a beer can be. Velvet smooth, with the heat and vanilla-wood depth of a spirit, this brew is intentionally brewed with low carbonation and is best savoured unchilled. Enjoy with caution.
