However, this next unearthly expression is said to have emerged from the peat bogs of Islay themselves. Ardbeg Wee Beastie has been described as a ‘monster of a dram’… with a formidable bite.
Matured in ex-bourbon and Oloroso sherry casks, Wee Beastie bristles with intense aromas of cracked black pepper, sappy pine resin and sharp tangs of smoke. An explosive mouthfeel bursts forth with chocolate, creosote and tar. As savoury meats sink into the palate, the long salty mouth coating finish slinks away.
Aroma: Very fresh, herbal, with hints of vanilla, pear, freshly cracked black pepper and
honey-glazed ham. Rich Turkish coffee, sappy pine resin. With water, more herbal notes like vetiver and fennel, along with aniseed, green apple and leather.
Taste: A rich, explosive mouthfeel with lots of chocolate, tar, creosote and smoked bacon,
followed by a burst of antiseptic lozenges, eucalyptus and more aniseed.

Whitehaven Wines began life in 1994 as a romantic business for a couple of corporate escapees, Sue and Greg White, who had given up life in the rat race of Auckland for another kind of life aboard their yacht. When sailing around the country, they took shelter in the Marlborough Sounds from Pacific storms and fell in love with the region. An easy thing to do when harbouring in the spectacularly pristine waters of the Sounds. They decided to settle there on terra firma once more and try their hands at wine production, hiring a winemaker and beginning a business which has now been around for 26 years. Greg has sadly passed away now, leaving a legacy as well as his wife and daughter, Sam, to run the winery. Their winemaker is Peter Jackson.

Hunter is a fan of pink bubbly and her winemaking team produce this one mostly from Pinot Noir as 55% of the blend with the balance being 42% Chardonnay with a 3% touch of Pinot Meunier. This trio is the classic combination used in the Champagne region where wines must be aged for at least 18 months prior to release on the market. That?s the exact timeframe that Hunter?s winemaking team decided to age this lively, dry pink bubbles for too. Rustica is our own take on these Spontaneous beers and was fermented entirely with the cocktail of microbes taken from the Waikanae wind. This is the 26th vintage of Turkey Flat Rose, which was first produced when light bodied pink wines were the absolute antithesis of what most wine drinkers wanted to consume back when bigger most definitely always meant better. How the tables have turned and now wines such as Turkey Flat Rose are viewed as the refreshing, light bodied ?reds? that they are. The residual sugar in this wine is 4.2 grams per litre and the alcohol is relatively modest for a Barossan wine, at 12.55 ABV.

Their award winning spirits are inspired as much by artists such as Tolstoy, Steiner and Tuwhare as by their scientific backgrounds in winemaking. The pair created the wine brands Alluviale and DaDa in a prior lifetime, before travelling through Europe and decided to marry distillation with therapeutic herbs. Packaging
The transparent seal on their bottles is made from environmentally friendly, compostable cellulose. The bottles themselves and label paper are made by long established European manufacturers under EU environmental regulations.
‘London Dry’
Historically, the term London Dry relates to the production methods. This dictates that the Gin must be made from pure 96% ABV neutral spirit of agricultural origin, all botanical flavour must be imparted through distillation and nothing can be added after, the Gin must be dry. While their Gins adhere to the law governing this term, they are a modern, unconventional interpretation of the classical style.
Tasting note: A complex and perfumed Gin containing 38 botanicals. Batch distilled in our 150L Arnold Holstein still and cut to strength with Kaweka spring water. Top notes of lime leaf, white currant, cedar, mango and floral hints. Exotic spice brings warmth and persistence to the palate.
Serving note: Perfect for an exotic Gin and Tonic or on ice as a sipping Gin. Used in cocktails, Albertine adds an ethereal dimension.
