The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the fresh ginger. Then turmeric adds weight to the palate and a fresh but earthy quality, not unlike dill.

The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls it all together. The palate is intense - sweet and juicy - but it is still very clean.

For this, "The Botanist", small-batch, artisanal Islay gin we use nine of the classic gin aromatics; orris root, cassia bark, coriander seed, etc and augment these with a heady harvest of 22 wild, native island botanicals, hand-picked by our expert foraging team from the windswept hills, peat bogs and Atlantic shores of this Hebridean island of Islay.

This truly seasonal and exotic cocktail is then slow "simmer" distilled in our unique and cherished Lomond pot-still, "ugly betty". Betty prefers to work at low-pressure and won't be rushed. 

So our precious botanicals are slowly and gently coaxed into releasing their complex, signature aromatics. This was a unique project for our head distiller, Jim McEwan. Jim says he had to "learn a new dance" with Betty, and none of us knew what to expect from that first, achingly-slow 17 hour distillation. The result: a highly distinctive, complex, floral gin with outstanding finish and impeccable provenance.

Named for the Hector?s dolphins that swim off Akaroa, Hector?s Gin comes in flavour profiles foraged from Banks Peninsula. Kelp, manuka, thyme, lavender, and lemon myrtle gathered by local foragers are blended with classic botanicals to create a dry gin with a slight minerality on the finish. Superb for mixing or in a G&T.

Smooth tones of Guajillo Chilli, steeped to bring out savoury, chocolatey tones and balanced with candied jalapeno heat for a spicy finish. This gin is all the good things of spice balanced by the freshness of juniper and citrus. Great for balancing out sweet mixers and as a way to spice up classic cocktails.

Ti Kouka Forest gin showcases vibrant and versatile botanicals native to New Zealand. Inspired by the Ti Kouka tree which is the symbol of Sandymount Distillery this gin includes Kawakawa, Horopito, Tarata, Ti Kouka bark, Harakeke seed, and Manuka.

Ginger with a subtle caramel note - watch as tonic changes this gorgeously green gin to a delicate lilac pink. 

A combination of two Kiwi icons: Sauvignon Blanc and Dancing Sands Dry Gin. State-of-the-art vacuum distillation means we are able to retain the complex flavours of the wine, while adding botanical sophistication from our Dry Gin.

The end result is a full-bodied and fruity gin that brings you bursting passionfruit, gooseberry, lime, and green apple ? all the tropical flavours you know and love from a New Zealand Sav Blanc, but with added punch and pizazz.

With light floral notes, a soft honey  sweetness and a strong juniper  presence, this M?nuka Honey and  Elderflower gin is smooth and easy  to drink.

Our Orchard Gin is a single-shot distilled gin using traditional and native botanicals, such as juniper, coriander, orris root, kawakawa leaves, nutmeg, and, of course, orchard pears.

This gin is the perfect choice for a sunny afternoon and pairs exceptionally well with neutral tonic waters or soda water.
