Sherry

For almost two centuries Tio Pepe cellar masters have used the 'Palma' chalk mark system in their bodega.  Traditionally the Palma mark was used on barrels to indicate wines of exceptional finesse and delicacy of aromas.  The more "Palmas" on barrel the greater the maturity of the wine.

Part of Ron Abuelo's Finish Collection, this 15-year-old Panamanian rum has been finished in oloroso-sherry casks. This has resulted in notes of citrus, toasted almonds and smoked wood.

This is a 21 year old unpeated single malt from Tobermory, which has enjoyed 3 years finishing in oloroso sherry casks before being bottled. 

The nose offers clove-studded orange, dark chocolate, florals and vanilla leading to a palate of prunes walnuts and dark chocolate and a long spice and leather finish.

This limited edition Tomintoul has spent the last 18 months of its 12 year maturation in Olorose Sherry casks which has given it a well rounded, creamy richness whilst staying true to its soft style.

This Aberlour has been finished in a first fill oloroso butt and bottled by independent bottler James Eadie.

Nose
Fresh and aromatic roasted coffee, cloves and pepper mingle with strawberries and raspberry jam.

Taste
Soft, rounded fresh strawberries, blackberries, blueberries and redcurrants.

Finish
Thick strawberry jam and clotted cream.

Only half a cask is bottled of this 52 year old Amontillado.

Time and the winery have taken care of this Amontillado Muy Viejo, transforming it into a truly splendid wine. It has been ageing for 52 years and bottled from cask number 5 in Bodega La Constancia Solera Museo.

Intense mahogany colour with amber shades, yet clean and bright. High glycerine content and persistent legs.

Spectacular, complex and profound nose, reminding you of antique furniture, cedar, lacquer and varnish. Pure concentration where we can still appreciate the origin of biological ageing.

The wine shows an overwhelming, very dry, direct, profound and almost wild palate. Its finish is impressive, round, showing a perfect balance between acidity and ageing with notes of iodine, brine, cocoa and caramel. The aftertaste is like a dream come true, where the roasted and balsamic flavours blend together with the salinity and bitterness make this wine a true legend.

Nose
Rich and indulgent, with treacle, toffee, golden syrup, raisins, candied almonds and orange peel.

Taste
Thick, syrupy notes of banana, sultanas and malt loaf dunked in black tea, with a pleasing hint of blacked pepper.

Finish
Chai masala, cardamon and brown sugar.

This warm mahogany whisky has an aroma of a depth complex fragrances from apples, vanilla, and ripe fruit and a whiff of orange zest on the nose and the palate is creamy with caramel, fruit, citrus, and a touch of dark chocolate. The finish is satisfyingly long.

This release from Kavalan's Solist series has been aged in casks which held the sweetest type of sherry: Pedro Ximenez. This is a warming and fruity whisky with notes of juicy raisins and honey syrup.
