Fifteen years in virgin oak has resulted in a rather cask forward profile, with aromas of toasted hazelnuts and milk chocolate opening up on the nose, followed by grilled honeycomb, vanilla sponge cake and hints of fresh pineapple and crisp green apple. The palate is initially rich and sweet, with notes of butterscotch, salted caramel and drizzles of heather honey, followed by vanilla and treacle. Matured for 13 years, the nose opens up with aromas of summer berries, hints of mocha and ginger and poached pears drizzled with butterscotch sauce. On the palate there are notes of cocoa dusted dried pineapple, grated cinnamon stick, boozy plum sauce, muscovado sugar and Manuka honey.
