This whisky is a story of provenance. A single malt shaped by an icon of Australian red wine. Starward Octave Barrels is a new distinctly Australian whisky that celebrates the very best of Australian red wine and whisky craftmanship. When a whisky speaks to Australia’s wine heritage and progressive Australian whisky craft, you know it will be special. Bringing the bold flavour from Yalumba’s old vine Shiraz, Starward Octave Barrels is an intense, deliciously different whisky. This special Starward Projects release has been aged in Yalumba’s The Octavius Shiraz 100L octave-sized barrels. Maturing in these hand-coopered vessels has led to intense interaction between wood and whisky. The elegant flavours of this distinctive Barossa old vine shiraz has left its mark. It’s a full-bodied and plump expression. Aromas of raisin, ripe peach and caramel meld with red and dark forest fruit characters. Toasty oak and marshmallow have been extracted from the oak barrel staves, leaving a long and rich finish.

A decadent single-malt whisky. Starward have taken inspiration from Tawny #1, and fully matured this spirit in both fresh and charred, Tawny fortified wine casks. To mix things up, they threw in some puncheon and hogshead barrels for fun, which allowed vibrant tropical flavours to come through. 

Vibrant and indulgent. Expect welcoming flavours of dried fruits, toasted oak and brown sugar. As warm and comforting as Nan’s fruit cake.

Irresistible to sip neat. Strong enough to stand in a cocktail.

We finished our red-wine-barrel-aged Australian single malt whisky in heavily peated whisky-drenched barrels from Islay, Scotland. And for the first time, you’ll taste coastal, peaty, smoky flavour in our signature fruit-forward whisky.

AROMA / Tropical fruits, toasted oak and a hint of sweet peat.

PALATE / Ripe red berries, coastal peat smoke, yellow peach and cocoa nibs.

FINISH / Oak slowly dries the palate, with a long peated finish.

The Hellyers Road 12 Year Old Single Malt Whisky is aged in American white Oak (ex-Bourbon casks) and was first aged statement expression from Hellyers Road Distillery. First released in 2014, it quickly became Australia’s highest-selling, locally crafted single malts.

Highlighting distinctive signature citrus nuances, akin to the most unique distilleries of Scotland, it is fair to say, that no Australian distillery is comparative. The style is a subtle and delicate - the most welcoming whisky for any new enthusiasts

The perfect partnership of Hellyers Road Original Single Malt with a pinch of our peated single malt spirit. This whisky delivers a tangy, fruity flavour that lingers delightfully in the aftertaste. Aged in American Oak (ex-bourbon). This whisky is non-chill filtered or artificial colouring added.

It presents as a refreshing, alternative single malt that is most definitely worthy of your attention.

Our Hellyers Road Distillery 15 Year Old Original Single Malt Whisky was vatted and married the most premium oak casks from our Oak Program and is non-chill filtered. This magnificent 15 year old whisky delivers exquisite flavour nuances, highlighted by our signature vanilla and citrus tones. Entwined by a calming softness - a reflection of time spent in our premium American Oak, this whisky has natural golden tones derived during natural maturation.

46.2% ABV

The marrying of flavour attributes of our special triple distilled single malt (American oak, ex-Bourbon cask matured) with our Port cask matured single malt (French oak) provide a unique twist to Tasmanian whisky styles. Highlighting distinctive signature citrus nuances, akin to the most unique distilleries of Scotland and the lighter fruit sweet notes of European Port casks, it is fair to say that no Australian distillery has a comparative whisky expression. Incredibly smooth yet brooding with deft flavours, this expression has become one of the distillery's most popular palate pleaser. 

48.9% ABV

KYRÖ NEW MAKE WHISKY SPIRIT is the so-called "new whisky". It takes you to the very beginning of the whisky making process. After three years of barrel aging, it officially becomes whisky.

There is sweetness and a slightly spicy rye flavor in the aroma, but it really comes to the fore in the taste. After the initial dryness, notes of licorice root and a light touch of anise appear before giving way to the feeling of lightly spiced traditional Finnish rye bread.

Use it as a base for cocktails or try it chilled as a schnapps.

Bright and lively with a myriad of fruit flavours, the herbal frehness of Teaninich rolls into the delicious dessert intensity of Oloroso and Pedro Ximinez sherries with a hint of anise. The beautifully balanced blend of rasin fruits and spicy oak makes it all quite singular. If zing is your thing then this dram is king.

Pale amber in colour with an aroma full of spice, apple and vanilla notes. It's a light bodied whisky with a smooth, sweet, slightly spicy taste from its rye, rye malt, barley malt and corn building blocks and a clean, short finish. Good for mixed cocktails.

Cape Byron ‘The Original’ Australian Single Malt Whisky, the signature expression, aged in American oak ex-bourbon casks.

The colour of a Byron Bay sunset. The palate offers soft vanilla, creme brulee, and biscotti characters, layered over distinct notes of pear, coconut and buttery macadamia.

An ace Australian single malt from the Starward range, Nova spends its life maturing in casks that previously held Australian red wine, sourced from wineries that produce Shiraz, Pinot Noir and Cabernet Sauvignon.

In fact, the casks come right from the wineries, and are only lightly charred or steamed before whisky goes into them, ensuring that the wine's flavour profile has an impact on the spirit. Particularly decadent stuff, it does very well when pairing with rich foods as well as being enjoyed by itself. it's also rather good in cocktails that take advantage of the bold red fruit notes. Perhaps even a Manhattan...?

Nose: Positively bursting with red fruit, strawberries with a Port-like mixture of fruit and nuts.

Palate: Honey, cinnamon and more red fruit on the palate, creamy nutty texture, luxurious mouthfeel with a touch of tannin.

Finish: Toffee with walnuts.
