BIG SKY CHARDONNAY MARTINBOROUGH 21
This new Wairarapa Chardonnay is the real deal with 100% barrel fermentation adding richness, a creamy texture and spicy flavour notes bringing complexity to this full bodied wine. It spent six months in oak with batonnage (lees stirring to add depth of flavour) in 50% new oak puncheons and 50% seasoned oak. It was lightly fined and sterile filtered.
The Big Sky story
Jeremy Corban and Katherine Jacobs founded Big Sky Wines in the Te Muna Valley, Martinborough, in 2005. They have since expanded their small vineyard, which is predominantly planted in Pinot Noir and also has a little Sauvignon Blanc, which they give extra textural complexity to with a little time in old oak on lees.
