Extra 4 is the latest scion of the notable St. Bernardus family. A refreshing blond beer that is brewed in the classic single style. The biggest of all Belgian beers, Quadrupels follow the monastic tradition of naming beers by their alcoholic strength. Fourfold is characterised by intense caramel, dark sugar and malty sweet flavours supported by raisin, date and fig notes.

This beer is can-conditioned, naturally carbonated via a refermentation in the can. This is the traditional method used for Belgian-style beers and allows the beer to further develop during extended cellaring.

Tripels are a strong pale beer that have been brewed in Belgium since the 1930’s. The name originates from when breweries marked their beers with X’s according to their strength.Those marked with three X’s being referred to as a Tripel. Threefold has complex flavours from fermentation with a Belgian style yeast strain. This beer is highly carbonated through a re-fermentation in the package just like the original Tripels from Belgium.

Alfajores are popular South American dessert typically made with soft cookies pressed together with a sweet gooey filling in the middle. To emulate this classic, we conditioned a big base stout on Honey, Almonds, Hazelnuts, Coconut, and Madagascar Vanilla. Alfajores pours pitch black with a frothy tan head. Decadent notes and flavors of fudge brownie, almond shortbread cookie dough, Ferrero Rocher Hazelnut chocolates drizzled with honey, and coconut mudpie come together in a creamy and velvety finish with the perfect amount of honey to offset the chocolate malts. This beer is a fun one and is literally liquid dessert in a glass.

11% ABV

Just like a birthday cake, this beer has layers of velvety and fluffy flavors that build on top of each other. A triad of intense hops fuel the juicy flavor – Galaxy, Citra, and Strata. Together they blend a fruit basket of aromas and flavors such as passionfruit, citrus, strawberry, and peach. Everything is smeared on a balanced and pillowy base of malt and fermentation.

Palliser Pinot Gris has gentle soft qualities and is off dry in taste with flavours of candied ginger and mandarin peel leading to a light bodied wine with a spicy finish.

The grapes in this wine are a combination of three vineyards; Pencarrow Vineyard 60%, the organic Om Santi Vineyard 28% and the balance from the Clouston Vineyard. A portion was fermented in old French oak barrels to provide complexity. The two portions were  blended and aged for a a further two months on lees to gain texture before bottling. 

Winemaker Karl Johner has a foot in at least three wine camps; the lime-clay hillside slopes of Lime Hill Vineyard is the smallest of them and is situated on the road to Castlepoint in the northern Wairarapa.

An outstanding New Zealand Chardonnay made from that site; its production is tiny but its fleshy, full body and creamy style more than make up for that. 

He also makes wine every year at Gladstone in the Wairarapa and, since the seasons are reversed in each hemisphere, in Germany.

Weizenbocks are a style of strong German wheat beer that can vary in colour from golden to dark brown depending on the malts used. For our first Weizenbock, we went with a pale version. You can imagine it as a supercharged version of our Hefeweizen. Born Too Late was inspired by the pale Weizenbock brewed by the oldest continually operating brewery in the world and arguably the finest wheat beer producer. It has the banana and clove notes from the yeast, supported by malt sweetness. Hazy in appearance and pouring with a delicious creamy head of foam.
