Note from our Viticulturist Mike Saunders :
Erin's Chardonnay grows on our steepest and highest slopes, in limestone soils which
impact a beautiful minerality and tension to the wine. The block is 100% Mendoza clone, its natural acidity is a perfect companion for the limestone soils. The small berries and thick skins from 2018 have created a wine with concentration and fine phenolics which add to the structure of the wine. Variation between the top and bottom of the slope adds layers of different flavours to the fruit and texture of the resulting wine. Extensive leaf plucking and bunch thinning ensured balanced crop loads and even ripening.

We hand picked our steepest block of Mendoza Chardonnay before a gentle whole-bunch pressing to tank without additions. We allowed the juice to settle overnight before we racked to French oak barrels for wild fermentation and full malo-lactic fermentation. The extended nature of fermentation brings not only richness to the wine but also layers and complexity. Barrel ageing lasts 15 months before the wine was estate bottled without fining

This old soul is a celebration of the juniper berry, and a twist on a classic Dry Gin. Nobody knew for certain what this formula was; only that it had been created by the Royal Apothecary. The apothecary would have imbued the drink with protective properties. He must have chosen Cloves - a dried flower bud of an Indonesian tree. This aromatic spice is still used for its powerful analgesic properties. Only the most prized spices would have been used. Many are convinced that saffron was the main ingredient. Not only was it renowned for its medical and sedative properties, but it would also have given the drink its rich golden colour. "This wine pays tribute to David Herd, who established Marlborough’s first commercial vineyard and winery at Auntsfield in the 1870s. Using David’s original vineyard site and specific Muscat Clone, this wine is made by applying the Methode Ancestrale technique, which can be traced to production of the first sparkling wine “Blanquette de Limoux” in 1531. As in the 153o’s, and 1870’s, fermentation with natural yeast is completed in bottle. The result is a wine that honours the foundational work of our ancestors and celebrates continued discovery and pleasure.
With each bottle being it’s own fermentation no two bottles are exactly the same. With little sulphur in bottle, this wine evolves in the glass. Initially this wine has fresh aromas of fresh apple, elderflower, nashi pear with hints of mint, and wild honey. In the glass, the brighter apple and pear notes dissipate and reveal more of the Muscat floral and exotic spice aromas. The palate has a fresh and crisp acidity, with tangy green apple. It is light and lively. With a slight brioche and almond complexity giving some generosity to the palate at this early stage of life.
The historic Petits Grains Muscat block is exactly where it all started at Auntsfield in 1873. These vines are trained along the old wire and Manuka posts as they historically were. This block has the potential for heavy crops, so we spend a lot of time carefully removing leaves very early in the season before flowering to reduce the bunch sizes and number of berries that set. Each bunch is carefully tended to during the growing season as this variety is fragile and requires optimum conditions to fully express the incredible aromatics of Muscat.

Unit price perThis wine takes it name from an old way Hungarian reference to the vineyard from where it comes. Mandolás is one of the Oremus vineyards and it is only planted with Furmint, the most respected grape variety of the region. During the weeks leading up to the harvest, the state of ripening of the grape is systematically checked and the golden yellow, health and ripe bunches are picked. A must with great density is obtained using a delicate and gentle pressing. Fermentation is in new wood barrels, which are carefully prepared, and takes between eight and 12 days. The wine is aged in 136-litre small barrels, which are typical of the region.

In the late 19th century, Taranaki was terrorised by a bona fide highway robber called Robert Wallath. Robert was on the young side but he was enthusiastic and principled. He never took money from the working poor, just property developers and dotcom billionaires, giving him a Robin Hood reputation that probably saved his neck.
Using an extended cold conditioning period and extra-pale malt for that nutty finish, this is a unique spin on the classic pilsner. Crisp and sharp with the right amount of bitterness, Stoke Pilsner has an aromatic sauvin hop finish, grassy notes and fresh aroma evoking images of classic Kiwi summers.

Our IPA is crisp and fruity with honey and citrus undertones. More English than American in style, Stoke IPA is tank-conditioned over four weeks to enhance the smooth, caramel sweetness. It is light but a step up in hop intensity from our Pilsner.
