Unit price perYuzu is a fruit that has been hotter than hot since the craft beer movement put it front and center. Not keen to follow trends, it wasn?t an ingredient we had planned on using, but when Neville Chun (who also grows our Ume) offered us a taste we filled our bags. It?s fragrant and fresh with the unmistakable flavour of Japanese citrus (grown locally in Te Horo). Not quite lemon, not quite grapefruit and not quite mandarin but amazingly vibrant and a very limited production run.

We ferment it using the pomace leftover from our Feijoa cuv?e so it?s really pushing the envelope of what a minimal waste project can achieve. At 3.3% it?s not as light as Petite but much lower in alcohol than our usual offerings, so you can enjoy a complex fizz without the buzz.

Inspired to capture his experience of Tokyo's many sensory dimensions and to experiment with rare Japanese Mizunara oak casks for the first time, Dr Bill united Glenmorangie part-aged in Mizunara oak with whisky that had spent time in both sherry and bourbon casks, for a unique limited-edition that's perfectly balanced with Glenmorangie's house-style.
The whisky fuses notes of pepper with bitter cherries and mouth-watering orange zest with incense and sweet oak - a unique and complex flavour profile resulting from the recipe of Mizunara oak, Bourbon and Sherry casks.

Toasted bread and caramelised malt aromas lead, complemented by a delicate interplay of dark chocolate and cacao. Opens fresh, salty and clean on the nose, developing to sweet malt dried over peat. On the palate, detect ashes, sweet tar, beaches and smoking chimneys. The finish is long and lingering, replicating the palate with salty, tangy liquorice, smoke, bonfire ashes and a phenolic quality.
