The third release in Wolfburn's Kylver series features the runic symbol Thurs, which roughly translates as thorn or giant. This fabulous Ciderkin is dry, super refreshing and only 3.5% abv while still having loads of heritage apple flavour. In fact, we think the flavour is so good, you won't even notice this isn't a traditionally made cider!
Ciderkin is naturally lower in alcohol than our other ciders because it is made by soaking pressed apple skins which results in a much lower sugar content before fermentation. For this ciderkin we soaked the skins for 48 hours to extract as much flavour as possible. With much less sugar to ferment, we've end up with a really tasty drink with only 3.5% abv.

The Hunting Hill Vineyard overlooks Mate's Vineyard in Kumeu and replanted in 2000, since then producing such outstanding grapes that the winemaking Brajkovich family decided to produce a single vineyard wine from here.
Hunting Hill has elevated acidity which lends this wine both a delicious vibrancy in its youth as well as great aging potential and longevity. It is fresh, piercingly zesty and full bodied with dry, savoury flavours and a long, tangy finish.

Unit price perAnother banger in our ever growing Hungarian section. This one is a deep ruby colour in the glass and offers a nose of red and black fruits complexed by chocolate and mineral notes, leading to a palate of blackberry, leather and spice flavours. It was matured in large Hungarian oak casks for more than two years. There are some lovely gorgeous Bordeaux notes in this wine - Petit Verdot being one of the seasoning grapes often found at low percentages in a lot of Bordeaux. It isn't showy though, more of a thought provoking wine.
An ideal match with dishes made of venison.

In Viré, the soil is chalky with large layers of clay. In Clessé , the soil structure is slightly different with a combination of chalk and clay mixed with liasic marls combined with
oyster- fossils which convey to the wine a specific minerality.This is one of the best white wines of the region combining suppleness and minerality.
The Vintage 2019 : After a mild winter, spring settled down with important variations of temperatures and abundant rain which engendered millerandage (small berries). Summer was warm punctuated by several heat waves and a few thunderstorms épisodes which brought some water. The harvest started mid september under a bright sunshine. After a mild pressing, the wines are aged in oak casks for a period of 12 up to 14 months in our XVth century cellar.
