All of the grapes in this wine were hand picked, whole bunch pressed and fermented to bone dry (one gram of residual sugar). It was made from 26 year old Clone 6 Chardonnay vines grown at Bridge Pa in Hawke’s Bay and disgorged at Soljans in West Auckland, which has all the gear for making high end sparkling wine.

It's full bodied, dry and made from certified organic grapes grown at the Morrison Vineyard at Pisa; one of the most highly regarded sub regions for grape growing in Central Otago.
Grapes were pressed straight to barrel for fermentation with native vineyard yeasts, entirely in older French oak with no new oak at all. The wine was then matured in the same barrels for a year.

This wine is made from hand picked grapes grown in the Bridge Pa region of Hawke's Bay on silty clay soils that lie over free draining red gravel. The wine was aged in French oak for 12 months, 50% of which was new oak. It has great structure as a result and represents an outstanding expression of one of New Zealand's lesser known grape varieties, Cabernet Franc, which makes up just 93 hectares of the country's total vineyard area today - a drop of nearly 50% from 2000 when there were 161 hectares. A sad decline, despite the growing quality of wines made from this outstanding grape variety.

The 2022 Escarpment Martinborough Pinot Noir is an assemblage of the best Pinot Noir vineyards across the district, with 75% of the grapes from the Te Muna Road sub region. The fruit was hand harvested and crushed to open top fermenters, with minimal intervention until it was pressed. Plunged just once a day for gentle extraction and then left to macerate on skins for an average vat time of 25 days. It has been aged in French oak barriques (27% new) for 11 months followed by a further 9 months in stainless steel tanks before bottling without fining or filtration.
