Unit price perOne of Australian wine's great collector's pieces. This smooth, soft and structured red is made from Grenache, Mataro (also known as Mourvedre) and Alicante Bouchet. The grapes were fermented with their skins to gain maximum colour (which says a lot, since Alicante Bouchet is a red fleshed 'teinturier' grape). The result is a super likeable, spicy and flavoursome red with a full body and layers of baking spice, red fruit and dried fruit aromas.

The Cabernet Sauvignon was sourced from four vineyards in the Barossa Valley. The diversity of the vineyard selection provides the rich, lifted Cabernet Sauvignon aromatics and palate structure for which The Signature is renowned. Winemaker Ben Glaetzer describes it incredibly aptly, we think, as a brooding, dark and deliciously seductive red. Its smoothness is thanks to the dried grape winemaking method, which provides intensely rich and concentrated dark fruit flavours to an already powerful grape variety – Cabernet Sauvignon. The dried grape method also seems to soften and smooth Cabernet’s sometimes edgy tannin structure by providing a suppleness and richness to the palate.

Plantings of this grape declined in the 1990?s in favour of the more expensive, easier to market Barolo and Barberescos. It came down to money, not quality and quietly the wine world mourned. Luckily a few faithful enclaves remained faithful to the grape like in Dogliani just south of Alba.

Unit price perThe fruit for this succulent Malbec is 50% from the Uco Valley, with a majority of calcareous soils and 50% from Luján de Cuyo with loam clay soils. The vineyards are located between 950 and 1.400 metres above sea level. In our vineyards, we do not use any herbicide or systemic product, managing it in an agro-ecological way.
The wine is vinified with 20% whole clusters grapes, and the rest is destemmed. Fermentation is in small concrete vats with indigenous yeasts and at temperatures between 24º and 26ºC. Maturation continues in small concrete vats until next harvest.
