Winemaking Notes: Harvested 9th April 2016, bottled 15th February 2018. Hand-picked and carefully selected 100% Abel Clone Pinot Noir grapes. All de-stemmed, cold-macerated and fermented in small batch stainless steel vats and left on grape skins for 4 weeks. Aged in 100% new French oak barriques of the Bourgogne Tonnelleries Rousseau, Remond and Meyrieux for 20 months. No fining and only light filtration before bottling.

It has spent 18 months in barrel, and is comprised of a blend of both dry and sweet cider batches, from a mix of heritage and desert apples. This blend gives it an impressive intensity, rich tannins, and a balanced sweetness, that should not be cloying. Once the juice is pressed it is left to undergo wild fermentation in old French oak barrels. Post ferment, the cider is aged in barrel, on lees, to build complexity and to soften the tannins. It’s designed to be a cider that delivers more than just sweetness and a light apple flavour, it’s designed to deliver a balance between tannins, sweetness, and alcohol.
This cider is handmade and mildly offensive, but you'll get over it.

Unit price perThis complex and affordable Chianti Classico is a full bodied, ripe and powerful wine made from a blend of 90% Sangiovese, 5% Colorino and 5% Cabernet Sauvignon, each grape contributing depth, body and balance to the wine.
This brand was traditionally produced by a well known cooperative with over 60 different grape growers contributing to the blend but the brand has now been acquired by Tenute Piccini, which employs the highly respected consultant oenologist, Riccardo Cotarella.
THE CHIANTI CLASSICO APPELLATION
Chianti Classico is the heart of the wider Chianti production zone and its wines are distinguished by a trademarked black rooster on their labels. The wines of Chianti Classico are higher in quality and noticeably so in taste than wines labelled Chianti, which come from a broader area in Tuscany. The wines taste better because the vines are planted on hillsides with a higher degree of iron rich soils and a greater diurnal temperature range, which provides more powerful, riper fruit flavours, which are balanced by higher acidity thanks to the cooler night time temperatures.
The Sangiovese grape must make up 80% of all wines labelled Chianti Classico compared to 70% Sangiovese for wines labelled Chianti.
Chianti was first defined as a wine producing sub region within Tuscany in 1716 by the Grand Duke of Tuscany Cosimo III, whose wanted to protect the integrity of the wines and prevent fraud. The Chianti Classico Wine Consortium was formed in 1924 with the distinctive Black Rooster trademark chosen to feature on the labels.

Fermentation is carried out mostly in stainless steel tanks which delivers freshness and directly fruit flavours, which are balanced by a small portion of the wine, typically 4% of the blend, being fermented at warmer temperatures in old French oak barriques. A little goes a long way and this oak fermentation provides a smoothness, softness and flavoursome interest to this deliciously complex Sauvignon Blanc.
