The Tullibardine 15 Year Old has arrived! The Highland distillery reopened in 2003, and this is one of the most well-aged releases to date. Seeing as it was matured entirely in first-fill bourbon casks, there's lots of creamy, honeyed influence to be found in this one.
Nose: Barley sugar and delicate florals, with apple crumble and custard.
Palate: Lots of honeyed malt, with creamy porridge and berry jam along with fresh sponge cake.

At the time, he was bringing down unbranded mezcal from a variety of villages in Oaxaca. In 2006, John created the brand Ilegal, originally just to supply his bar in Guatemala. Unit price perFour Pillars - Our Sherry cask solera is made up of 42 casks, some from Spain and some from one of our mates who makes famous Australian fortified wines, historically known as "Australian Sherry" and now known as Apera.
They’re much older than our Chardonnay barrels, varying in age from 15 to 35 years old. These barrels were first filled more than a year ago, and this is the first solera release taken only from the bottom row of barrels.
Slightly deeper in colour, this is a rich, intense and layered barrel aged gin. A pine needle quality underpins some amazing complexity. The residual Sherry and Apera characters have integrated beautifully with the deeper cassia and star anise flavours - think dried fruits and nuts.
The addition of some Spanish Amontillado Sherry has added some length and sweetness to the final gin.
This is a recipe inspired by the diversity of our land: Oaxaca. We use our GAD agave spirit as the base, then we macerate the 8 botanics: juniper and 7 botanics from Oaxaca: avocado leaf, yerba santa, cacao and Oaxaca tangerine amongst others; then we make a triple distillation.
This is a Gin made with local ingredients as a homage to the diversity of our region.
Notes – There is a balance between the avocado, yerba santa and the juniper with a final touch of agave.
