Unit price perA gorgeous wine, made with 40% Syrah, 35% Carignan, 15% Grenache Noir & 10% Marselan (a cross between Grenache & Cabernet Sauvignon) showing just what old vines can do when they find themselves in the right soils (in this case limestone terrace overlaid with gravel).
The Carignan grapes undergo semi-carbonic maceration whilst the Syrah and Mourvèdre grapes are destemmed and fermented at a temperature of 28 ° C for 14 days. Malolactic fermentation and ageing takes place in stainless steel to retain freshness of flavour.
The result is rich, juicy and fruit forward with aromas of white pepper, cassis, violets, and sage. Lush and decadent, with a lingering chocolate-raspberry finish.

Winemaking: The grapes are destemmed before fermentation takes place at a temperature of 28° C for 12 days with daily pumping over for maximum colour and flavour extraction. Rack and return is performed twice at the end of the fermentation.
Tasting: Round and smooth Syrah with rich blackberry and plum aromas .
Bouquet: Bright blackcurrants and blackberries with a touch of nettle and a hint of earthiness.

Six generations have nurtured some of the most historic vineyards in Australia.
In 1839 William Formby arrived in Australia from the United Kingdom and it was in 1882, after four decades pioneering South Australia, he purchased the now historic Metala estate.
In 1891 William and his son, Arthur, planted 21 rows of Shiraz, and 14 rows of
what are now the oldest family-owned Cabernet Sauvignon vines in the world.
In 1894 a further 5.4 acres of Shiraz were planted. After almost five decades making Metala wine in a purpose-built winery on the estate, the winemaking was transferred to Arthur’s Brother-in-Law, at Stonyfell Cellars. The wines continued to be made here until management shifted to various holdings beginning with Dalgety Wine Estate in the early 1970’s.
In 1981, 5th Generation Guy Adams took over the management of the mixed farm estate. With a sincere appreciation and respect of viticulture and to family legacy, Guy, together with his wife Liz, began a 20-year long battle to return Metala to its original home. In 2022 the dream became a reality and Metala came home to Langhorne Creek and the family who planted and have nurtured the vines for more than 130 years.

Unit price perWinemaking Philosophy
The Arneis vineyards used for this selection are cultivated on loose soils with a strong presence of silica and a particular microclimate, which can give wines aromatic and elegant.
The grapes are picked by hand and the harvest is followed by cold maceration with soft pressing. The must then undergoes temperature controlled fermentation at 16-18 °C for about 10 days. The last important phase for this wine is a short period of bottle ageing, in order to develop its structure and pleasant bouquet.
Tasting Notes
Colour: clear straw yellow.
Bouquet: complex, intensely fruity with attractive notes of vanilla, face powder and candyfloss.
Palate: well balanced and elegant. The finish shows notes of peach and honey.

Vinification
Grapes harvested by hand in small crates are brought quickly to the winery and undergo manual selection on a belt. De-stemmed and not totally crushed, they are sent to concrete tanks, where they macerate for about 10/12 days at a temperature of 22/25°C. Once fermentation is finished, the grapes are left to macerate for a few more days after which they are racked and pressed using a traditional vertical press.
Organoleptic Characteristics
Light ruby red with faint purplish reflections they, typical of the variety that is not very rich in color. Hints of small red fruits, morello cherry, black cherry are evident on the nose. The palate is distinguished by its typical balanced tannicity and surprising fullness, savoriness and length.
Bouquet: Bright and vibrant with ripe fruits, primarily dark plums and blackcurrants, with a hint of raspberry coulis and coffee mocha oak.
Palate: Rich blackcurrant and raspberries. Crisp, clean acidity and delightful tannin structure leading to a lingering finish.
