Cassis is the French term for "black currant". Crème de Cassis de Dijon is a liqueur made from black currants. In France, the term "crème" stands for a liqueur with a particularly thick consistency and aconcentrated, full flavor.
"Cassis de Dijon" is a protected designation of origin for a cassis produced exclusively in Dijon, according to the strict regulations of the capital of cassis. Cassis de Dijon must be made from fresh fruit, while cassis from other provenances must also be made with fruit juices, concentrates, aromas etc. In addition, berries from countries outside France must not be used.
The quality of Cassis de Dijon also depends on various important factors: the quality and integrity of the whole fresh fruit, the types of berries used, the level of the Fruit content, the know-how and the cellar techniques of the producer Cassissée (16% vol.) is made exclusively from whole, freshly harvested black currants.

Exceptions during December:
In December, please allow 3 business days for delivery. The last day for Christmas orders is Monday, 15th December for all South Island and all rural deliveries, and Wednesday, 17th December for North Island non-rural deliveries. After these dates Regional Wines cannot guarantee delivery before 25th December. Bear in mind that business delivery addresses may be shut from Monday 23rd December as Xmas falls on a Thursday.
