Unit price per1800 tequilas are made by Casa Cuervo from 100% blue agave. The name comes from the "historic event" of aging tequila in oak for the very first time. The line was first launched in 1975 as a premium sipping tequila. 1800 Reserva Reposado tequila is the first of the sipping tequilas launched by Cuervo and called the "original premium tequila." The tequila is aged for at least 6 months in French oak.

Unit price perFounded in 2006, Aviation gin takes its name from the Aviation cocktail, which was created in the 1900s. The gin takes a Dutch style rye spirit base combined with with juniper, lavender, anise, sarsaparilla, orange peel and cardamom, and the botanicals are steeped in grain spirit for 48 hours before they are redistilled. A pretty intriguing tipple, with a very handsome Gatsby-esque bottle. A fabulous gin to go its eponymous cocktail, though we wouldn't suggest you wing it. (Geddit?) Crisp notes of juniper on the nose alongside delicate floral sweetness, parma violets, a touch of citrus peel and some green vegetal notes in there too, with a pinch of spice. Wonderfully spicy notes on the palate, more prominent than on the nose, cardamom shining through and a scattering of cinnamon, with floral notes continuing. Spices linger though the finish, along with the return of citrus peel. 700mL 47%ABV

Hand harvested without destemming, cold carbonic maceration (4 to 7 ºC), alcoholic fermentation with indigenous yeasts for 3-4 weeks, no sulphur added then 6 to 9 months in old oak.

This is a high quality, classic expression of the Morgon sub-region. The Classique comes from vines of 20-55 years old, grown on mostly granite solis. Fermented 100% whole bunch, so some carbonic influence, ferment in concrete, then 6-9 months in aged barrique.

Still wishing to support our growers and the region during this difficult time, yet understanding that our ‘house’ style of Cabernet Franc would not suffice, we decided to create a delicious, prettier, chilled version (12%) - ‘Franco’. Garnet in colour. Brimming with notes of earthy wild strawberries. The palate is highly textural, and soft, finishing with bucket loads of flavour and warmth. Serve chilled.

A very challenging season. A moderate spring and average temperatures for ripening. Several significant rain events occured toward the end of summer, and the wet conditions continued into Autumn.
The fruit was machine harvested and delivered to the winery. It was destemmed into a small open top fermenter. Once fermentation began, naturally, it was innoculated and plunged twice daily. After fermentation finished it remained on skins for a further week prior to being gently pressed off. It remained in both stainless steel and neutral oak for 8 months and was filtered prior to bottling. Bottled unfined.
