Tasting Note
Aromas of honeysuckle, citrus zest and fresh strawberries from the Chardonnay and Pinot Noir fruit. Extended time on lees during secondary fermentation contributes to more complex aromas of nougat and roasted nuts. The palate is balanced with delicate fruit flavour, fine creamy texture and refreshing natural acidity.
Winemaking
Handpicking, gentle whole bunch pressing, cool fermentation, 100% malolactic fermentation, complex assemblage and extended ageing on lees after bottle fermentation, all combine to produce a stylish and complex wine.

Unit price perThe fruit contained a mix of four Pinot Noir clones – 777, 115, Abel & UCD5. Fruit was spilt into three fermenters – one containing 100% whole bunch, 70% whole bunch, and the other 100% de-stemmed. Fermented with natural yeast. Gentle winemaking techniques were used to avoid excessive extraction. 23 days on skin, pressed to 100% old French oak barrels. 12 months in barrel, and allowed to undergo malolactic fermentation naturally in spring, before being racked and allowed to naturally settle and integrate in tank. Unfined and unfiltered.

Unit price per100% Chardonnay from Vinho Regional Lisboa.
The vines are planted at a density of 4.200 Plants/ha on clay and limestone soils. The fruit is destemmed and then pressed and fremented at tempreatures around 18 degrees celcius.
With the ideal soil and climate conditions, the result is a top quality, aromatic, concentrated wine. Great diurnal variation results in ripe fruits but supporting acidity.

Tasting Notes
This is a wine with a deep colour, aromatically rich with predominant notes of ripe fruit, spices and vegetables. In the mouth it is well balanced and velvety with notes
Vinification
The grapes, previously destemmed, went through a low temperature pre-fermentative maceration for 24 hours. The alcoholic fermentation was done in small stainless vats with temperature control, not going over 27. ° Celsius for 12 days. The wine aged, partially, for 5 months in French and American oak barrels.
