The Prophet’s Rock Pinot Gris comes from both the Home and Rocky Point vineyards. Planting in these warmer areas of Central Otago and practising careful viticulture allows for the production of a very aromatic style of Pinot Gris, while retaining the trademark freshness of the region. This wine has achieved an avid following and wide acclaim, despite very limited production.

The vinification is heavily influenced by winemaker Paul Pujol's time in Alsace where use of wild yeast, multiple small vessels and long ageing are the norm. After long slow ferments the various components are aged on their yeast lees before bottling.

Master distiller Bill White selects individual casks matured exclusively in traditional
american oak whisky barrels before marrying them together for a further maturation in casks that have previously been used for making fortified madeira wine. the madeira cask finish enhances the orchard fruit character of peach and pear with marzipan and nutmeg and gives a dry nuttiness to the long, oak finish.

Emerson's - The Orange Roughy's scientific name is Hoplostethus atlanticus.  Which roughly translate as, a hazy, hoppy pale ale with a tropical fruit aroma, citrus flavour, and malty backbone.  In the past, the roughy has been subject to unsustainable practices - completely selling out.  Thanks to the hard work of our brewers, numbers are now on the rise.  Careful you don't exceed your quota, though.

Moa St Josephs is a classic Belgian Tripel. Strong spice, caramel and banana ester characters create complex flavours and aromas which are heightened by its extended bottle conditioning period. The combination of bittering hops, malt and candy sugars compliment the high alcohol content and integrate into a very approachable and drinkable Tripel.

9.1% ABV.

Timorasso is often called the “white Barolo” and this grape produces a white wine with great potential for aging.

The soil in the Tortona area is sandy clay and the vineyard aspect is South, South west at about 250-450m. the vines are trained to Guyot with ten buds per plant at 4.500 vines per hectare.  All grapes are handpicked around the end of September followed by 6 hours of cryo-maceration. Fermentation is in temperature-controlled stainless steel tanks with followed by 6 months on fine lees.

The end result is a super complex minerally driven wine, full-bodied on the palate with fresh citrus and tropical fruit notes leading to a mineral finish.

This spicy North Canterbury Pinot Noir was made from grapes grown along terraces on the banks of the Waipara River with wild yeast fermentation and hand plunging before  10 months maturation in French oak barriques. 

The region's naturally low cropping levels provide concentrated flavours in the grapes, which translate to an expressively savoury wine with smooth silky notes.

Caruso Nero is also organically certified and punches above its weight, delivering beautiful fragrant aromatic appeal and smooth, rich flavours right now, but also has the ability to age for up to 10 years, improving and evolving into a spicy, complex red over time.
