The Yuzu Sake is Ippin’s signature “limoncello” sake. It uses two types of premium yuzu, giving it a wonderfully zesty characteristic. It’s sweet and fragrant, with an ABV of 8%. It’s refreshing to drink, with a brilliant citrus flavor that balances beautifully with its sake dimensions.
PREPARATION AND PAIRINGS

Unit price perO2 Chenin - Chenin with oxygen, aged and oxidised in barrel for 3 years. In the spirit of the great dry Oloroso Sherry wines of Southern Spain or similar from the Jura, Portugal and beyond comes the first Central Otago version of what an aged style of wine can achieve.
Chenin, grown our Morrison vineyard, has been barrel fermented in older French oak and left aging on lees for a year. Racked and then fortified to 15% the wine is then left in barrel, 3/4's full, with air for a period of three years. Over this time it slowly develops its colour, a bright amber golden hue, and crucially also its flavours and aromas.
Aromas of lightly burnt butter & umami lead to a palate that is driven by bright acidity. Dry mineral edged nuttiness elevates these savoury flavours to a salty edged finish leaving nothing but freshness of flavour. Delicious and refreshing at the same time.
This is a wine that demands hard cheeses , salty cured meats, shellfish in their brine and piles of fresh notes and dried fruits to go with it, it will sing with matches such as these and remind you of every Mediterranean holiday you wish you had.

Named in honour after John McAskill who donated the land next door to our vineyard in 1860 to be used as a cemetery for the Gaelic speaking Scottish pioneers of the Clare Valley.
Tasting Notes
Deep red in appearance with a fresh and youthful aroma. Red fruited – plums, cranberry, with underlying warm spices. Subtle oak maturation gives a wonderful textured and vibrant offering adding malt and spice complexity. Flavours linger in the mouth effortlessly, combined with a ripe but fine and long tannin profile bringing all the components together in complete harmony.

GCV White Hut is named after a small sub region of the Clare Valley located just North of the Clare Township. With a high altitude of over 400m above sea level, consisting of undulating valleys and hills the region is well known for producing grapes of the highest quality. Enjoyable in its youth but carefully cellared will continue to evolve over the next 10 years.
Tasting Notes
The colour is a youthful pale straw with bright green hues. The aromatics are fruit driven with citrus, lemon pith and mandarin peel characters. The palate is delicate with a lemon flavour profile and a texture reminiscent of meringue. Long and fine, the palate lingers effortlessly. A high quality wine made to drink in its youth or for those that prefer, cellar for another 10 years.

Unit price perKurokame Honkaku Shochu - 50 proof, 25%ABV
Kurokame is a surprising imo shochu made with “purple” Satsuma sweet potatoes. These potatoes have a robust reddish purple skin, but are a pale yellow inside. It is distilled traditionally in earthen pots (kame) using black koji (kuro koji) – thus the name, Kurokame – or black stone pot.
Kurokame has a surprisingly neutral nose. Imos tend to smell like fresh dirt in a good way. This imo smells more subtle – almost a roasted essence. The initial palate is spicy with a rich sweetness. And then the roast hits – a roasted wheat flavor. The roast holds along with a hint of sweet spiciness throughout the finish.
This is a delicious imo shochu. It’s difficult to decide whether we prefer it neat, cut with water (hot or cold), or on the rocks. Highly Recommended
