On the outskirts of Brussels there is a very old tradition of making beer by fermenting it spontaneously with microbes from the air. Rustica is our own take on these Spontaneous beers and was fermented entirely with the cocktail of microbes taken from the Waikanae wind.  Much like a baker making sourdough bread we captured the wild and produced something complex and tasty. Try it like the Belgians do with some ripe pungent cheese and cured sausage.

inspired by the wild iron-rich beaches of the west coast we devised a smooth warming stout that combines oats, caramelised rye, and chocolate wheat malt with our fruity English yeast strain and some lightly zesty Nelson hops. The result is a stout fit to fortify against wild west coast winter storms and the perfect match to a night beside the fire. 

6.0% ABV.

North End's interpretation of a traditional Gose combining mild lactic tartness , coriander spicing and a malt accenting salt character. 

5% ABV.

Moa St Josephs is a classic Belgian Tripel. Strong spice, caramel and banana ester characters create complex flavours and aromas which are heightened by its extended bottle conditioning period. The combination of bittering hops, malt and candy sugars compliment the high alcohol content and integrate into a very approachable and drinkable Tripel.

9.1% ABV.

Brewed using traditional Czech Pilsner methods.  Fruit and spicy hop characters are dominant, with a wild malt backdrop and a crisp, clean finish.

A lengthened maturation process also adds complexity.

Kettle soured wheat, lightly salted and infused with white peaches - a delicate three way salty, sweet and sour balancing act. A little bit of white mischief in a beer where anything gose.

Salted White Peach Sour - 2.9% ABV

The arrival of hops to the brewing scene in England in the 1500's led to a moral panic. 

Hops were condemned as a 'wicked and pernicious weed', one which would lead to the erosion of social and moral standards. Thank goodness they were right. Here’s hoping that our homage to the original pernicious weed continues this gradual decline. Organic Rakau and whole cone Nelson Sauvin go head to head in this strong, golden, hoppy brew. Bitter, yes. Intensely hoppy, absolutely. 

Too much, never.

IIPA - 8% Alc./Vol 

East Coast anthem IPA - A big ol' hop poppa of a beer, packing an intense mango, tropical fruit hit from US big guns, Simcoe and Mosaic. It's just bigger and juicier than its bitter West Coast counterpart, like sippin' hazy hop nectar from a can. It's all good.

Explicit Haze Warning: If cloudy beer offends you please drink from the can or close your eyes.

Hatsukoi, meaning first love, is a Japanese inspired pilsner hat debuted during our Tokyo Taphouse pop up restaurant at 91 Aro Street. Brewed with light malted barley and rice using the traditional first press method. Clean, crisp with a delicate noble hop character.

Japanese Rice Lager - 5.5%

Forget clarity, there's nothing clean cut about this beer. This is a Pale Ale amplified and distorted in a wall of haze and hop feedback. Galaxy, Nelson and Mosaic riffs drift in a warm fuzz of juicy malt and tropical fruit noise. Plug it in, dial it up, crack the can. It's fuzzy ugly and you love it. Originally brewed in collaboration with Sydney's rock god pizza tossers Frankies.

The benchmark session beer from Dunedin's iconic Emerson's brewery. Fruity melon and citrus hop aromas and flavours are backed up by toasty malt in a package that's big on flavour while being moderate in alcohol.  A BBQ classic.  A wonderfully drinkable interpretation of a classic English ale style. 

Bookbinder bitter is brewed with a blend of four malts, and a combination of two classic Nelson grown European hops (Fuggles and Saaz). The beer pours an attractive reddish brown. Bookbinder Bitter has a sweet perfumy malt and hop aroma with soft malty fruit and vinous palate that is both full flavoured and refreshing.  The beer's long, gently drying finish will leave you craving more.  

3.7% ABV.

Red IPA - fresh, fruity, gooseberry and citrus hop characteristics with a gentle red malt flavour to balance.

A rascal lives in us all, sometimes big, sometimes dormant, never extinct.  Our playful nature is something close to the core and too often forgotten.  Go on, make a snowman, give it some devil horns, kick it over and make a snow angel!!

6.3% ALC./VOL.

Saison Zest is the farmhouse ale made in the French speaking, Wallonian province of Belgium. Traditionally it was a refresher for tired and thirsty farm labourers. 

Saison Zest is a modern interpretation, a stronger full flavoured brew. Orange of hue with a big rocky head, aged for two months in the bottle. We've chosen a simple grain bill that showcases Gladfield's superb malts and added Orange Zest. Paired with floral and citrusy hops, our saison yeast imparts massive character and a dry finish. We believe Zest will refresh and sustain the farm worker or office shirker. Enjoy in moderation, it's stronger than it seems! Unfiltered and unpasteurised in the traditional manner, for full flavour. 

Serve at cellar temperature: 8- 12C in a goblet Organic Pilsner malt, candi sugar and orange zest, Crystal malts, hops, yeast water. 

6.5% ABV

This Naughty Fruity Ale was inspired by a well-known Belgian 'one-of-a-kind' speciality beer.  A sustaining drink, this complex beer will develop over time, with a further ageing in the bottle.  Our interpretation is unfiltered, unpasteurised and bottle conditioned for full flavour.  The grain bill is a balance of organic pilsner and crystal malts.  A subtle combination of hops and 'secret' fruits are combined with the native Flemish yeast strain giving a sweet bouquet and a rewarding strong drink.. Pour gently into a goblet at cellar temperature.  Enjoy in moderation, with a smile and good company.
