There is sufficient reduction to overshadow everything but a subtle floral nuance. On the palate though there is both good freshness and verve to the pretty and delicious middle weight flavours that exude a bracing salinity on the balanced, clean and dry citrus-tinged finale. This could use better depth so a few years of keeping are in order. 88-91 Burghound (2024)

Ripe aromas of poached pear and apple compote are laced with hints of iodine, lemon rind and a whiff of brine. The succulent, round and sappy middle weight flavours display notably better than average persistence on the citrusy, clean and nicely dry finale. This punches above its weight and is worth a look. 'Our CHABLIS come from parcels situated beside the village of FONTENAY-Près-CHABLIS, at the very heart of Chablis’ vineyards. On high plains or steep hills, all our Chablis grow on stony soils (Kimmeridgien Limestone) which allow a moderate production. Most of our vineyards are between 15 and 25 years old. Some parcels were planted by Gilles’ great grandfather, Marcel, around 1950/1960. Our Chablis are fresh and fruity (white flesh fruits, like peach and pear, with citrus notes), and already showing good minerality.''Grape 100% Chardonnay Food match oysters, shell fish and grilled fish, but also with traditional Burgundy recipes such as “jambom persillé” (ham with parsley)

The 2022 Chablis Vaillons 1er Cru has more mineralité on the nose than some of its peers: crushed limestone filtering through the malic scents and a slight algae-like aroma. The palate is well-balanced with a keen thread of acidity, seductive orange pith and citrus notes. The 2022 has a composed and harmonious finish. This is a well-made and delicious Vaillons.
