The finer, and not quite as fleshy, medium-bodied flavors exude more evident minerality on the nicely energetic flavors that deliver fine length on the balanced finale. Outer quote mark The 2022 Chablis Montmains 1er Cru comes from two adjacent parcels at the valley's entrance. Its fragrant nose has discrete touches of orange blossom and light apricot scents, clean and precise. The palate possesses ample weight on the entry and is well-balanced, with a twist of citrus peel leading to quite a compact, slightly bitter finish that needs a little more flesh to come through. Lovely crisp structure and fleshy mouthfeel from a superb Chablis producer in a wine that reveals white fruit notes such as peach, and has a persistent mineral structure. In the mouth, a stony sensation which is so typical of Chablis makes this a round and pure wine.

Chablis is the northernmost wine region in Burgundy, which produces only Chardonnay. The cooler climate gives these wines crispness, acidity and a flinty minerality.

This Bourgogne Blanc from La Soeur Cadette is made with Maconnais Chardonnay gapes sourced from the communes of Uchizy and Peronne.

The wine is directly pressed and the juice is transferred to large steel tanks where it remains until ready to bottle (usually about 8 to 10 months). The whites from Cadette are always clean, clear, sharp, energetic and a delight to drink.

Great gateway into the wonderful, deliciously complex world of Pinot Noir from its most famous traditional homeland, Burgundy in France. This is a top producer's starting point into the silky elegance and power of French Pinot Noir. 

From the winery...

Our father bought this parcel of Ladoix, originally planted with Pinot Noir, in 1995. Grapes ripen slowly on this slightly stony soil of marl and limestone, due to its north-north-east exposure and combe location. This characteristic quickly proved ideal for white wines. After conducting conclusive trials on 0.4 ha in 2007, Erwan decided to replant this plot with Chardonnay vines in 2013. It now stretches over 3 localities, including ‘Les Marnées’ and ‘La Blancharde’. To date, this is the largest planting undertaken on our estate.

TASTING
Fresh, floral aromas emerge on the nose, with a hint of indulgent brioche. Powerful on the palate, the wine reveals toasted bread flavours balanced by a pleasant freshness. Great energy stems from its liveliness and firmness.

Grown on 3 hectares facing south, this white Mercurey is a subtle blend of grapes harvested from several parcels thriving on clay-limestone soils, including Les Montots and Bussière. Exceptionally light, supple and fragrant, it offers a less mineral but equally subtle tasting experience than our Clos Rochette.

TASTING
Elegant aromas of fruit and flowers prevail on the nose. It is well balanced and pleasantly fresh on the palate. A pleasant wine best enjoyed chilled as an aperitif or with a meal.

‘Vaillons’ originates from the Latin vallis or valles meaning an ‘elongated area between two raised zones’ which escribes the 1er Cru plot from which this wine is made.

Bright, clear hue with attractive golden tinges. This 1er Cru offers remarkable aromatic complexity with aromas of ripe citrus and white flowers. The palate is round and seductive with a lively attack. Excellent length and a refined aromatic persistency combining fruity notes and a delicate acidity. Pleasant sensation of freshness.

The name ‘Mont de Milieu’ defines the slope that previously marked a boundary between two constituencies in Champagne and Burgundy.

Clear, bright hue with light green tinges. This 1er Cru reveals a remarkably rich aromatic profile with ripe citrus fruits and white flowers. The palate is rich and round with exceptional length.

Grape: Chardonnay 

Soil: Steep slopes composed of a sandy marl and limestone.

Age of the vines: 31 years old

Maceration Process: Whole bunch pressed, lightly crushed. Alcoholic and malolactic fermentation in barrels, "sur lies" without "batonnage".

Pressing: Pneumatic press

Total elevage: 14 months 

Oak used: 25% New french oak  from Tronçais and Allier forests. Light and long soft toast.

Domaine Pattes Loup is a 24 hectare certified organic vineyard owned by Thomas Pico in the village of Courgis in Burgundy's northern outpost, Chablis. This creamy and crisp Chablis is an excellent example of what happens when small scale meets lofty ambitions of making full bodied, beautifully balanced, complex Chablis using organically certified grapes.
