This Cremant de Limoux Brut Rosé is made according to the traditional method with Chardonnay, Chenin and Pinot Noir. The wine has a beautiful salmon pink colour with a delicate and lingering sparkle. The bouquet presents a great aromatic richness and notes of red fruits of strawberry and raspberry. The palate is characterised by a nice unctuousness and a well balanced acidity ending with a lingering and refreshing finish. Enjoy with Sashimi, oysters, mussels and cured salmon.

A young and vibrant methode traditionelle made in the famous Burgundy region of France and showing lively citrus, apple and rock melon fruit backed up by keen acidity.

After the pressing, grapes musts are cleaned out and prepared under cold conditions during 24 hours. The fermentation takes place in low-temperature conditions. For a more intense freshness, the malolactic fermentation is not realized. Wines are then taken away and raised on fine dregs, before being stuck and filtered to prepare them for the second fermentation. They stabilize wines by cold process to avoid any tartaric haste. The second fermentation is generated by the addition of yeasts and sugar inside the bottle. The Wines are then aged on their lees for 1 year in our temperature-controlled cellars.

Chardonnay with bubbles combines two of the wine world's most popular things and this wine comes from Limoux in the southern French region of Languedoc. This is a fresh, crisp wine made using the Champagne method. Extended ageing on the lees adds toasted notes and a rich texture. This wine is exceptionally good for the price.

Frank and fresh attack of fresh fruit, floral notes and minerality on the nose. Round and balanced mouth, the Chenin dominates with its crisp fruits and finesse. The bubbles are both intense and persistent.

Grapes: 60% Chardonnay, 30% Chenin, 10% Cabernet Franc

Terroir: Chalky soils consisting of small fossilized stones.

Winemaking: Manual harvest before pressing in whole bunches. Separate vinifications for each grape and 18 months on lees.

Domaine des Pothiers makes wines from Gamay Noir, the Beaujolais grape, only this producer is in the Cote Roannaise, in the northern Loire Valley. Eclipse is a pale pink sparkling wine made solely with Gamay Noir, using the Methode Ancestral technique; the oldest winemaking method to create sparkling wines via a fermentation in the bottle. This style is now affectionately known in wine circles as Pet Nat; an abbreviation for petillant natural, due to being naturally sparkling following its second ferment in the bottle. Unlike champagne, which is made this way, pet nat is not disgorged, so this style retains lees and therefore a touch of cloudiness. 

This bubbly is medium dry with 9% ABV, and really well balanced by crisp zingy acidity and savoury flavours. A great aperitif style.

Domaine Rolet is considered one of the flagship wines of the Jura département, a wine region located between Burgundy and Switzerland. This region's cool climate wine region expresses itself in a range of white and red grapes that typically enjoy cooler climates. The most planted grapes in the region are Chardonnay  and Savagnin; a specialty to this area, which has traditionally been vinified under a veil of yeast, not unlike the aging of sherry but with quite different results in terms of aromas and flavour, which can be complex, savoury and nutty. The main red grapes in Jura are Poulsard, Trousseau and Pinot Noir.
