Unit price perYalumba is a family owned and fiercely independent wine producer with roots back to 1849. This is their take on the classic Australian blend of Cabernet Sauvignon and Shiraz.
The Cabernet Sauvignon was sourced from four vineyards in the Barossa Valley. The diversity of the vineyard selection provides the rich, lifted Cabernet Sauvignon aromatics and palate structure for which The Signature is renowned. The Shiraz comes from vineyards of varying age, with the oldest planted in 1925. These blocks are of sandy loam, featuring yellow sand and ochre clay over red clay. The combination of these Barossa Valley blocks provides a Shiraz with sweetness, fullness, depth and layers of complexity.
Matured for 19 months in 25% new French barriques and Hungarian hogsheads, balance in older French and Hungarian barriques and hogsheads.
Deep, dense purple-red in colour. Seductive and alluring florals, cool mints, red pomegranate with fine blackberry fruits and dark cherry aromas. The palate is delightfully generous with dark red cherry fruit that merges into ironstone tannins. A medium to full bodied wine with a long, flowing tannin profile. Taittinger Brut Réserve is a blend of Chardonnay (40%), Pinot Noir and Pinot Meunier (60%) wines from over 35 different vineyards and vintages matured to perfection.
This high proportion of Chardonnay, unique among fine non-vintage champagnes, and a minimum ageing of three years in the cellars, where it reaches the peak of aromatic maturity, makes Taittinger Brut Reserve a delicately balanced champagne, known for its consistently excellent quality all over the world.
Taittinger considers it an honour to produce a Brut champagne every year without exception. The brilliant body is golden yellow in colour. The bubbles are fine, while the foam is discreet yet lingering. The nose, very open and expressive, delivers aromas of fruit and brioche. it also gives off the fragrance of peach, white flowers (hawthorn, acacia) and vanilla pod. The entry onto the palate is lively, fresh and in total harmony. This is a delicate wine with flavours of fresh fruit and honey.

Unit price perMadeira is a wine and the name of the Portuguese island it comes from, 1000 kilometres south west of Portugal, off the coast of Africa. The soils here are volcanic and the climate has a high rainfall. Wines made here were historically shipped in barrels in the hills of ships where the heat baked (maderised) them, hence the name Madeira came into being. Today the wines are baked in the wineries to emulate the style. This one is medium sweet with rich flavours of caramel, dried apricots, walnuts and spice. Fresh acidity adds balance and this is an ideal Madeira for cooking with or sipping lightly chilled.

Unit price perProphet's Rock winemaker Paul Pujol produced precious little of this Chardonnay - just six barrels were made from hand picked grapes grown at Lowburn in Central Otago. The wine was fermented with wild yeasts and all up it received 15% new oak, with the remainder being older barrels. This wine is set to become a collector's piece, not least because it was inspired by and made in collaboration with a French winemaker. Prophet's Rock winemaker Paul Pujol and Burgundy winemaker, Francois Millet of Comptes de Vogue in Chambolle-Musigny joined forces to produce this fitting match to the outstanding Pinots from this wine brand.

Tripel Karmeliet is still brewed to an authentic beer recipe from 1679 originating in the former Carmelite monastery in Dendermonde. Written over 300 years ago, this recipe describes the use of three kinds of grain: wheat, oats and barley.
The name Tripel karmeliet thus refers both to its origin and its in-bottle refermentation. From many trial brews of multigrain tripels carried out at our brewery in the 90s, it appears that the particular historic combination of the 3 kinds of grain still remains the ideal blend.

Unit price perVin de Paille is a method of producing concentrated, sweet wines through extended drying of the harvested grapes. The earliest written records go back to 800BC and the resulting wines are very long-lived.
This wine is made from Pinot Gris from the steep half-hectare block on the Home Vineyard.
The grapes were carefully hand-picked onto racks and then dried in the loft of our vineyard barn for 45 days. The dried grapes were then slowly whole-bunch pressed over 6 hours. The rich juice was then fermented with indigenous ‘wild’ yeast.
Fresh and lively, it sings on the palate! Pear, apple, spice, florals and honeyed notes can all be found in this complex wine made with Pinot Gris from our Home Vineyard site. The luscious texture is followed by incredible refreshing acidity, leaving the palate cleansed and wanting more.
This rich, layered and complex wine manages to retain freshness and structure thanks to the elevation of the site and the concentration from the drying process.
