Unit price perEtsu Yuzu Gin has been macerated for seven days using traditional botanicals such as Japanese Yuzu, juniper berries, liquorice root, angelica, coriander and matcha. Etsu Double Yuzu Gin is fresh with citrus notes, using natural ingredients, giving this gin a unique and light finish.
Etsu Double Orange and Etsu Double Yuzu Gin are distilled at the Akita Distillery, in the Akita prefecture of Japan in the Honshu Island. Akita Prefecture is located on the coast of the Sea of Japan and extends east to the ?u Mountains, the longest mountain range in Japan. It is these mountains that Etsu Double Orange and Etsu Double Yuzu take their fresh and light aromas from.
Etsu Double Orange Gin and Etsu Double Yuzu have been macerated for seven days using traditional botanicals. After maceration, only the gin is distilled without the botanicals, which allows the oils to infuse. Only after the distillation process is fresh water from the mountain source added, which gives these gin their fresh taste.
Blossoms from Decanter Bay Road in Little Akaroa, thyme, lavender and lemon myrtle gathered by local foragers are blended with classic botanicals to create a fragrant blush pink gin with a delicate and subtle sweet floral finish. The scent of blossoms and summer in the bays.

Unit price perTASTING NOTES Our distilling team set out to create a gin that balanced the freshness and acidity of rhubarb and apples with a bit of warmth, sweetness, and spice from brown spices like cassia and nutmeg. The resulting gin is an apple & rhubarb crumble in a glass, a mixture of warmth and freshness perfect to enjoying a G&T, a Highball or a Fruit Cup. And because there’s so much natural fruit packed in this gin, a bit of haziness may develop overtime but that’s nothing to worry about… it’s just all the fruit reminding you it’s there!
PRODUCTION NOTES With Warner’s certified as a B-Corporation and Four Pillars certified as carbon neutral by Climate Active, sustainable distilling is a huge focus for both of us, which meant looking slightly left of field for waste products which we could extract amazing flavours from, such as cacao shells and fig leaf. Post-distillation is where the main flavours from both regions come into play - the rhubarb juice from Warner’s, and apples from the Yarra Valley make up the heart of this gin. In fact, three separate liquids are blended into the gin after distillation; rhubarb juice, apple juice and an apple cider spirit. On the nose this gin is weighed down by kawakawa while the citrus notes of lemon, orange, and grapefruit light up your olfactory bulb. Thyme lurks in the background. On tasting, the kawakawa is still predominant, but the thyme comes to the fore along with layers of sage, liquorice, and tarata, which binds all these aromas together. There is a long liquorice and citrus finish.

Unit price perInk Gin is a premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives. Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel.
These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.
The final ingredient is added in a post-distillation infusion. The specially prepared petals of the butterfly pea flower are steeped in the still for twenty-four hours to give Ink Gin its distinctive colour.

Unit price perThe Cotswolds Distillery in Stourton is up and running - hooray! This is their Cotswolds Dry Gin, made with juniper, coriander and angelica root macerated in their pure wheat spirit for 24 hours. Following this, they add a botanical selection including bay leaf, grapefruit, lime, black pepper, cardamom seed and Cotswolds lavender to their carter head still for distillation. To bring it down to bottling strength, a robust 46% ABV, they use naturally refined Cotswolds water.
Nose: Light, floral juniper blends well with the Cotswolds lavender. This soon gives way to the vibrant grapefruit peel and warming cardamom.
Palate: Opening with grapefruit, fresh juniper and black pepper, followed by herbaceous notes of bay leaf, coriander and angelica. More lavender brings a bright, delicate character to the full-bodied gin.
Finish: Refreshingly clean on the palate, with lime and bay leaf.
