Kaiyo is a negotiant bottler started by a drinks group led by former Asahi employee Mr. Watanabe who was able to purchase "teaspooned" malt whisky barrels from an unnamed Japanese whisky supplier via his connections in the industry ("teaspooning" is when a distiller adds a teaspoon of another whisky into the barrel before selling it, thus preventing the purchaser from claiming it as a single malt from that distillery). The whiskies are purchased as teaspooned new make (unaged distillates) and then put into Japanese Mizunara oak barrels from Ariake, considered one of the best manufacturers in the world.

A fruity, zesty and softly-smoky Japanese whisky, matured in mizunara oak casks. Aromas of orange peel, jasmine, soft cedar and coastal air fill the nose. The palate offers notes of earthy coffee, green apples, black tea and fresh herbs, with hints of cinnamon pastries and mango that linger in the finish.

Matsui 'Sakura Cask'

Kikukawa Eizan’s “Beauty in the Cherry blossom Garden”
The artist, Kikukawa Eizan, portrayed Japanese women of strength and grace in his ukiyo-e masterpiece, which we believe was a great fit for the sakura cask which also possesses an underlying strength of flavor and a sweet aroma.

Port is a Portuguese fortified wine that is robust and sweet with a fuller and richer body. It is therefore usually served as a dessert wine or digestif. Kavalan Solist Port Cask is fully matured in Portuguese Port barriques under the subtropical climate to create the multiple fruity flavours such as plum, blueberry, blackberry and strawberry just to name a few, with chocolate as the main background note.

Time tested tradition, spiced with a dash of innovation, this is the process we followed in making AMRUT INTERMEDIATE SHERRY CASK SINGLE MALT. Newly made spirit, matured in the traditional way in virgin / ex-bourbon casks and is transferred into Spanish ex-oloroso sherry butts wherein it matures for a year more, gaining an added sherry finish. The finishing touch is thus lent by a further period of maturation in ex-bourbon casks. Result: an essay in elegance with subdued sherry notes that bears the tell-tale Amrut Signature of quality and innovation. A worthy successor to the much-acclaimed Amrut Fusion and Amrut Double Cask.

Nose : Instead of the usual biscuit aroma, we now get moist cake. And my word: is it fruity and spicy!! Love the freshly waxed oak floor, too. Brain-explodingly complex and multi-layered with one of the most intriguing sherry-style-bourbon-style marriages on the market;

Taste : Cracking delivery and entirely unique in form. The structure is decidedly oak-based, but acts as no more than a skeleton from which the juicy sultana and spices drape. Salivating, too, as the barley kicks in powerfully. But the liquorice-orangey-honeycomb bourbon theme quietly shapes the flavour profile; the spices pulse and glow;

Finish : Quite a chunk of natural caramel quietens the more exuberant characteristics; long and elegant.

Not strictly a Japanese whisky, Togouchi sources grain whiskies from Scotland and Canada and ages them in Japan.

This is a blend from Chugoku Jozo, who mature their whiskies in a tunnel rather than a warehouse. The temperature of the tunnel is always 15 degrees while the temperature of the cellar at the headquarters in Hatsukaichi city is a little higher than that. Nutty, spicy whisky with a lovely butterscotch mouth feel. On the palate it expresses vanilla sweetness and a fine peat iodine, with hazelnuts and chocolate on the finish. Almost feels like a whisky/bourbon hybrid.

White Oak Akashi Blended Whisky is unique and different, it is a blend of malt whisky from the White Oak Distillery and imported malt whisky and spirit (from molasses).

This release from Kavalan's Solist series has been aged in casks which held the sweetest type of sherry: Pedro Ximenez. This is a warming and fruity whisky with notes of juicy raisins and honey syrup.

57% ABV

Barrel ageing has infused Sanin with a faint vanilla aroma and fruity notes of pear on the finish. The fresh, underground water of Mount Daisen delivers a smooth, mellow taste in this light and refreshing whisky.

Blended malt whisky from Mars Shinshu Distillery in Nagano.

Tasting notes:
A rich golden whisky with light, sweet and floral fragrances with notes of sweet pear and dark cacao.

It has a beautiful soft body with underlying flavours of dried fig and allspice with a soft malt finish and hints of ginger cookies and honey milk.  Aged in bourbon, sherry, American white oaks.

A variation of Kura The Whisky blended malt whisky, which has enjoyed a finishing period in casks that previously held rum. We're rather fold of rum cask finished whiskies, as they help to bolster any lip-smacking fruit notes - and that's exactly what has happened here.

Kura White Oak 8yo 720ml

Exceptionally hand crafted Okinawa Single Malt reserved in selected North American white oak casks for 8 years. Kura is made from best quality Indica with black Koji unique to Okinawa using traditional production methods of over 600 years of craftsmanship. Complex aroma and mellow taste bring whisky lovers to a different and new concept of true local Japanese Single Malt.
