Unit price perWe are thrilled to have the wines of Domaine Marcel Deiss back in store, only this time with a wider range than we have had in the past. These cult French wines come from Alsace in north east France; the country's driest wine region and a territory long disputed between the French and the Germans. This history accounts for why these wines are made from grapes classically considered to be German in origin. All Deiss wines are certified organic, made from grapes grown biodynamically and they break new ground in style and quality. Many are field blends, made in homage to historical growing methods where many different grape varieties grew together alongside each other, were picked together and fermented together.
This medium bodied, complex dry white is a blend of three classic Alsace white grapes, Muscat, Riesling and Pinot Gris with a little Pinot Noir added in, which comes from vines planted between 1977 and 1997, which are grown at high density of between 8,000 and 12,000 vines per hectare on white gravels.
This grapes are pressed slowly from whole clusters for up to 12 hours followed by wild yeast fermentation with the wine being aged for 12 months in large old foudres.
The result is a complex dry white made from three great white grapes and one red. Maverick? Definitely. Delicious? Absolutely.

Unit price perYuzu is a fruit that has been hotter than hot since the craft beer movement put it front and center. Not keen to follow trends, it wasn?t an ingredient we had planned on using, but when Neville Chun (who also grows our Ume) offered us a taste we filled our bags. It?s fragrant and fresh with the unmistakable flavour of Japanese citrus (grown locally in Te Horo). Not quite lemon, not quite grapefruit and not quite mandarin but amazingly vibrant and a very limited production run.

Unit price perBig on flavour, low in the use of sulphur. This biodynamic wine comes from Domaine de Causse Marines in the Gaillac appellation in southern France. The blend is 50% Mauzac, 20% Loin de l’Oeil, 20% Muscadelle and 10% each of Chenin and Semillon, all of which combine to create a complex, nuanced white which offers a nutty, stonefruit nose and palate of apricot and green apple notes. Its fresh acidity adds great length.

This is a super tasty with with complex fresh aroma spectrum and flavours of lemons, limes, and grapefruit, underpinned by the freshness of sorbet and a lingering dry finish.
Grapes were whole bunch pressed and fermented in stainless steel barrels and stainless tanks with wild yeasts, no temperature control and lees aging for three months.

Sauvignon Blanc skins from the Urlar Vineyard in Gladstone (courtesy of Jannine from Huntress Wines) co-fermented with fresh pressed Braeburn, Fuji and Crab Apples, then aged in tank for a full nine months.
Sitting somewhere in between a wine and a cider, it's full bodied and textural with a solid tannin structure and a bone dry finish.
