Process: Spontaneous fermentation activated by wild yeasts and bacteria that the grapes bring in with them, no added yeast.

Tips: A very fresh and well carbonated beer. Excellent as an aperitif and to pair with delicate taste dishes.
Try it also with fat cheese, cold cuts or salmon.
This beer started out as two seperate barrels that we filled in 2018. Three years later we blended the two barrels together before separating the blend out into two different finishing barrels. This part of the blend was finished in an american oak barrel with 250g/L blueberries and raspberries.

The second iteration of Perpetual, our spontaneously fermented
barrel aged sour beer, finished on raspberries. For this beer, we
selected two barrels of spontaneously fermented (Méthode
Traditionnelle) beer from the 2020 and 2022 seasons. We then let
this blend re-ferment with 400g/L raspberries for a further 10
months before packaging.
