This is the first release of our non-botanical rums. It is rum in its purest form, made from just molasses, water and yeast, distilled on a copper pot still and completely unaged. It’s also 100% organic. Perfect for cocktails and mixing but also interesting and robust enough to warrant sampling neat.

If you are unfamiliar with just how flavoursome a good unaged rum can be, you’re in for a treat!

Tasting notes:
Nose: Peaches, strawberries and Custard (yes, really!)
Palate: Red fruits and milk chocolate. Silky mouthfeel and a nice long finish with warm licorice notes.

An excellent blend of rums aged for up to 8 years in white oak casks that previously held scotch whisky and bourbon. Dried fruit and spice on the nose leads to a plate of further dried fruits and vanilla.

With its roots going back to 1788, Smith & Cross and its partners became prominent handlers of Jamaica rum, with extensive cellars along the banks of The River Thames. Throughout the 19th century and into the early 20th century, Jamaica Rum became revered for its deep, full flavours and pleasing aromas. This rum represents the distinctively flavourful and aromatic style that made Jamaican rum famous.

Very aromatic and complex with notes of pipe tobacco, dark chocolate, winter spices, hints of dark fruit, as well as fried banana, a little suggestion of foam banana sweets too!
The palate is thick and rich, massive spice notes carrying forth suggestions of dark fruit, prune, plum wine, vanilla, cedar, unlit cigars, calves leather and musty orange peel.
Long and very warming on the finish, with notes of caramel and pepper on the tail.

Marvellous gin from Normandy, made using a base of French wheat spirit, complemented by the likes of juniper, orange peel and orris. Post distillation, the producers also add a hint of apple essence, helping to bolster the gin's fruity flavour profile.

This Tamnavulin from Cadenhead has spent 14 years maturing in a small selection of ex-bourbon barrels. Aromas of juicy stone fruits soaked in syrup, fresh pineapple, peaches and grapefruit kick off this summery feeling dram. Zesty lemons with banana cake covered in caramel buttercream arrive on the palate. Finally, warm fruits, flat cola and chocolate biscuits come through to finish.

Yoowe Bacanora is made in the state of Sonora, Mexico, from maguey Pacifica (Agave Angustifolia), which is also known as Yaquiana locally. The agave is cooked in a traditional underground oven with mesquite and oak. After a wild fermentation, there are two distillations in stainless/copper stills.

This is a spirit that the Yaqui Indians have been making in Sonora for some time. This is really rare. Aromas of pepper, earth and saline. The palate is complex and clean with minerals integrated with spice, notes of salt and mint. The palate is deceptively smooth, and oh so enjoyable!

A clean and balanced gin with top notes of grapefruit, juniper, chamomile, and cardamon. Base notes of spice, pine, and pepper, held together with the complexity of angelica root.

Knocknaveagh is the flagship gin for The Cambridge Distillery Company, named after the homestead from which a journey of discovery commenced in 1862.

A gin that balanced the strictures of tradition with the freedoms of adventure, by using classic botanicals and combining them in modern ways to take you on a voyage of exploration.

Knocknaveagh is simple and fresh enough to be the mainstay of any GnT, with layers of complexity to keep you returning to the glass.
The “Cambridge Dry” Style, conceived as the counter point to a London Dry, nods respectfully to tradition but brings a twist of modernity.

To complement the base foundations of juniper, coriander, and angelica, a selection of additional botanicals including cardamon, grapefruit, black pepper, and chamomile take you in a new and exciting direction, away from a juniper heavy blend whilst still invoking the past.

Unlike Bourbon or Rye, which, by definition, must be aged in new oak barrels, the US*1 Unblended American Whiskey is aged in a way that utilizes whiskey-soaked barrels to achieve a rich and unique flavor profile. Crucially, the US*1 Unblended American Whiskey never contains grain neutral spirits – hence its “unblended” distinction.

Nose: Polished oak, buttery corn and a kick of caraway spiciness.

Palate: Wonderfully creamy on the palate, boasting notes of butterscotch, golden syrup and sultanas.

Finish: Corn appears again, with peach and apple alongside it.
