Sidewinder is an opportunity to celebrate and explore the regional diversity of this iconic New Zealand varietal. 

Classical in its fresh herb, lime cordial and passionfruit seed aromas with a coastal element of weathered rock and salt spray. The palate is linear and textured finishing dry and salivating.

Flamboyantly adorned with fragrance and charm, our very own Prince rocks the signature deep purple and velvet [tannins]. Valentina Syrah delivers violet florals, blueberry, ripe blackberry, red plum and allspice, with a twist of liquorice, all wrapped in elegantly, fine tannins. Feel the funk and the rhythmic, screaming flavours. Extravagance with substance, this is legendary, genre-bending Syrah.

A single vineyard wine from the Carter Vineyard in Onetangi, Waiheke Island. Matured for 9 months in the finest French Oak barriques - 35% New.

Helles Bier

Slip on your lederhosen and transport your mind to one of the great German beer halls to enjoy this traditional Helles.

We have followed the strict German purity rules of the Reinheitsgebot – all malt, noble hops, and traditional German lager yeast to give you a taste of Bavaria. The rules don’t stop there – the German beer-drinking customs stipulate you need to always start your beer with a hearty Prost!, full eye contact, and a bottom glass clink. Best served with Wienerschnitzel, Sauerkraut, and Pork Knuckle.

Fresh baked oven loaves, subtle spice, and garden honey.

Made from New Zealand malt, double distilled in copper  pot stills and aged for 5 years in French oak ex white wine casks, which have been shaved, toasted and re-charred, then finished in ex-bourbon barrels. Sweet and malty aromas on the nose lead to primary tastes of candied orange peel and honeycomb on the palate. The finish in American oak lends notes of almonds, clove and vanilla. This mouth coating, easy drinking whisky surprises with the bourbon creaminess giving way to a long peppery dry finish.

This delicious American style whisky is made from 51% corn, 21% rye and 28% Barley. Matured in our oceanside barrel house, it has a grassy, spicy tone with a distinct Rye note that balances the sweetness of the honey. Look for notes of toasted oak, spices and vanilla wrapped in the phenolic sweetness of Manuka Honey. 100% natural Manuka Honey made on Waiheke Island.

Fair Light is a first-ever blend of premium unpeated single malt, with the distiller's selection of Waiheke's peated back catalogue. Fair Light is named for the first ever synthesizer. This speaks to the synthesis of the two hemispheres that went into this bottling.

Palate There are hints of heather honey and vanilla, followed by subtle spices like cinnamon and nutmeg. Gentle NZ peat smoke and chocolate.

WINEMAKING

The vintage of 2023 was a challenging year climatically, very wet, and humid with low sunshine hours and periods of intense rain culminating in flooding in late January and Cyclone Gabrielle in early February.  The weather improved for the harvest months, but low sunshine hours resulted in wines with a light elegant touch, fresh, lively, and delicious in their delicacy.

Our Sauvignon Blanc vineyards are elevated hillside sites, grown on volcanic-influenced soils and exposed to cooling sea breezes. Dry grown and hand harvested before being gently whole bunch pressed, the juice is racked clear and fermented in tank with cultured yeasts, then blended, f iltered, and bottled in the winter. 

TASTING NOTE

Our 2023 Estate Sauvignon Blanc is a classically styled, wonderfully f resh aromatic wine. With clean bright aromas of snow pea and freshly chopped herbs the palate has citrus and elderflower characters, finishing with a refreshing crisp mineral purity. A fresh breezy wine that displays beautiful balance with a mineral delicacy, perfect for summer drinking.

OUR BOHEMIAN STYLE PILSNER BIER IS BREWED USING IMPORTED FLOOR-MALTED PILSNER MALT, LAGER YEAST AND TRADITIONAL CZECH SAAZ HOPS.
