Introducing Allier. A celebration of NZ single malt whisky and one of the most important French Oak forests: Allier. 

This whisky is made from unsmoked New Zealand grown malted barley and has been matured in a second fill wine cask from the Allier forest, central France. Initial grape notes from the wine have been pulled off in the first fill. What’s left, and what has been imparted is beautifully smooth, balanced, and compliments the malty NZ whisky.

The bottling is giving generous notes of pain aux raisin, dark chocolate, custard, hazelnut.

This delicious American style whisky is made from 51% corn, 21% rye and 28% Barley. Matured in our oceanside barrel house, it has a grassy, spicy tone with a distinct Rye note. Look for notes of toasted oak, spices and vanilla. Cream corn and smooth caramel finishes with a hint of rye bite.

Fair Light is a first-ever blend of premium unpeated single malt, with the distiller's selection of Waiheke's peated back catalogue. Fair Light is named for the first ever synthesizer. This speaks to the synthesis of the two hemispheres that went into this bottling. 

Colour Amber Light 

Nose Heather, honey, vanilla spices, gentle peat 

Palate There are hints of heather honey and vanilla, followed by subtle spices like cinnamon and nutmeg. Gentle NZ peat smoke and chocolate. 

Finish Medium-long, dried fruit, chocolate.

Maple pear tart, sticky raisins, hazelnut, chewy nougat,  drizzled with borage flower honey.

Two Tones refers to the two kinds of cask used for the maturation of this blended whisky; European oak which formerly held New Zealand red wine & American white oak used exclusively for whisky.

Quercus Alba is the Latin name for 'American white oak' and this limited edition whisky is packed with oaky flavour. During the selection process our head distiller said 'for those who like chewing on a pencil'. The heavy char on the virgin oak cask has activated rich tannins, dark toffee and deep wood flavours. We think it's a little reminiscent of the heavy tannic oak notes in American whisky. If you love oak, this release is for you. 

The liquid inside is Manuka Smoke single malt, one of our most identifiable flavour profiles and a signature of our distillery. It's made using locally grown malt that has been smoked with native Manuka wood, mashed, fermented and then double distilled through the Thomson all copper pot stills. The spirit offers an interesting black tea note along with the typical Manuka oils. 

Quercus Alba is limited to 250 bottles only.
