Spontaneous fermentation of the must in contact with the skin for 240-300 hours at controlled temperature and just with autochthonous yeasts. Open-cycle process with frequent pumping of the must over the pomace. Natural malolactic fermentation. No addition of sulphites during the whole vinification process. Only after the end of the malolactic, re-integration of the sulphites lost during the vinification steps to restore the initial natural value.
Ageing:
12 months in wine stainless steel tanks, 12 months in Slavonic oak 750-liter-casks with the application of music therapy to optimize the spontaneous microxigenation process and improve the fining of the wine, 6 months in bottle.
Ruby red intense colour with slight burgundy hues. Scent typical of very ripe fruits and slightly toasted wood and spices, with some balsamic notes. Full bodied, rich in minerality and freshness, balanced smooth taste of black sour cherry and plum tending to velvety with ripe fruity notes of blackberry and mulberry, and spices like clove and cacao. The feature that makes our natural authentic Primitivo of Gioia del Colle unique is the toasted almond aftertaste.

WINEMAKING NOTES
The fruit for this wine is a blend of Mendoza (42%), Clone 548 (24%), Clone 15 (21%) and Clone 95 (12%) grown on the sandy silt soils of the lower terrace of the Askerne vineyard. Hand-picked and whole bunch pressed, the juice was transferred to barrel for fermentation. The barrels were a mixture of both wild and inoculated ferments and completed 100% malolactic post ferment. The wine was subsequently aged for 10 months with lees stirring to add volume and complexity. The final blend has a 29% new French oak component, and 15% 2nd fill.

This wine was made from 100% MS Clone Syrah grown on the stony and sandy lower terrace of the vineyard. The grapes were fermented in open top tanks. The ferments also included a 10% Syrah whole bunch component as well as 4% Viognier for added complexity. Gentle hand plunging was used for extraction. The wine was then held on skins for a total of 4 weeks giving an extended period of post ferment maceration to build richness. The wine was then pressed and racked to French oak barriques where it was aged for 9 months. The final blend has a 20% new oak component and 60% second fill.

Fine tannins gently fill and flow seamlessly through the wine.
WINEMAKING NOTES
This wine is a blend of 5 clones of Gewürztraminer each bringing their own distinct characteristics to this aromatic blend. Beautifully ripe fruit was harvested over several picks from late March through to early May. With minimal skin contact the juice was pressed off to tank and divided up into different ferments. The juices were cool fermented using a variety of different yeasts to get the best out of the Gewürztraminer aromatics. Racked and aged on light lees for 6 months prior to blending.

Unit price perMānuka honey is New Zealand’s most famous honey - maybe even the world's most famous. When we first experimented with it, we were blown away. Nothing is added - just Mānuka honey - and the complexity of flavours is unlike anything you’ve tried before.
Mānuka mead is deep, rich, and layered, with flavours that shift as you sip. The weight of it on the palate is reminiscent of port, but it’s more moreish, more nuanced. It carries the land it comes from in every drop - earthy, spicy, and sweet.
Tasting Notes: Vanilla, warm spices, subtle woodiness, and the unmistakable richness of mānuka honey.
Serving Suggestions:
Enjoy slightly chilled on a hot day, or at room temperature to let the flavours unfold.
Try it on the rocks like whisky to open up the mānuka richness
Pairs beautifully with aged cheese, dark chocolate, or a fine cigar.
A perfect after-dinner sipper—bold, grounding, and uniquely New Zealand.

Vineyard This wine is from our BioGro certified organic and Demeter certified biodynamic estate vineyard located in the Bendigo sub-region of Central Otago. The vineyard was planted in 1998 after careful site selection and is the pioneer vineyard in Bendigo New Zealand. The soils on the beautiful north facing slope are Waenga fine sandy loam and Molyneux shallow sandy loam soils. The Pinot Noir clones 10/5 and 5 have been used for the production of this Methode Traditionnelle sparkling wine. Planted with a vine density of 3,800 vines per hectare on 44.55° south.
Cuvee 100% Pinot Noir, hand-picked on the 8th March 2022 in ideal condition. Bottle fermented and aged on lees for a minimum of 24 months. Riddled and disgorged by hand at Quartz Reef.
94/100: "Delicious, fresh, crisp and dry with a core bouquet of strawberry and fruit spice, fresh brioche and cherry, there’s a lees and miso moment, apple and floral complexity. Dry, salivating, crisp and dry with a firm mousse, finesse and charm and flavours that reflect the bouquet. A lovely example, well made, lengthy and fine. Great drinking from day of purchase through 2029." Cameron Douglas 2023
5 Stars: “The distinctive, non-vintage wine (5*) I tasted in mid 2021 was estate-grown and hand-picked at Bendigo, in Central Otago. Made entirely from Pinot Noir, it is pink/red, with strong peach, strawberry and spice flavours, yeasty, dry (2 grams/litre of residual sugar) and lingering. A very harmonious wine, it shows excellent maturity.” By Michael Cooper, NZ Wines (Aug 21)
