Our first sparkling pink Portuguese wine and it's dry, medium bodied and super zest with aromas of citrus fruits and biscuits. It is soft and refreshing with a delicate acidity that gives it a great balance.  Great match with salads and good company.

We were keen to go to Sicily and pick the lemons ourselves. But, Giuseppe, the orchard owner, said "Are you guys stupid? It doesn't work like that." But we weren't offended because he said it in an Italian accent so it sounded cool.

Tasting notes:

Straw gold yellow. Fine and elegant nose mixing white fruit aromas (pear, quince) with vanilla notes. Fruit driven on the palate, the attack is fresh, followed by a round and supple texture. Flattering oaky notes appear on the aftertaste.

Winemaking: Night and morning harvest. Gentle crushing of the grapes – short maceration on the skin (between 6 and 12 hours) in order to get aromatic complexity – light pressing – pre-fermenting oxygenation of one part of the Chardonnay to keep freshness – controlled Alcoholic fermentation in vats (18-20°C / 65-68°F)

Soil: A wide variety of soils such as sand, clay, chalk, schist, gravel and pebbles.
Climate: Selection of vines located in the coolest areas of the Languedoc region near Limoux (wide temperature range between cool nights and warm days) and in the Gard region where the weather is warmer. The wine combines the strength and the freshness of the Limo
Aging: Maturation with stirring of the lees.

The somber black label with an English name is the perfect presentation for this ultra-dry brew. In fact, it is 3X drier than a normal Junmai.  Don't let the label fool you. It is full of umami resulting in a distinctive aftertaste and sharpness that is unparalleled in the sake industry. Brewed by the Imayo Tsukasa Shuzo in the Niigata Prefecture is sharp and smooth and easily enjoyed.

We tweaked our Elemental base with the intent of not barrel aging all of it, and conditioned it on Banana, Peanuts, Oreos, Madagascar Vanilla, and Lactose. All Wise pours like pitch black 10W-30 motor oil with a quickly dissipating head. Aromas of brownie batter, creamy banana, and roasted peanuts rise up before extreme flavors of rich German chocolate cake, banana creme brûlée custard, crushed Oreos with cream, and peanut butter fudge brownies all wrap up into a creamy super thiccccc mouthfeel that is a decadent treat fit for a King.

Starting off with a thic(5x) base we conditioned the finished liquid on Cinnamon Toast Crunch cereal, maple syrup, pecans, cinnamon, Madagascar vanilla, and a touch of Lactose.
Swirls and Spirals pours viscous with aromas of French toast, maple custard, and your favorite bake shop. The flavors work so well together offering notes of chocolate pudding, cinnamon coffee cake, sticky brown sugar, pecan sandies, and the perfect amount of vanilla frosting. Starting its journey as an imperial, amplified lacto-sour, we’ve given it a huge double hit of Aussie blueberries and coconut ice cream. It begins strong and fruit-forward with robust tartness, while lashings of Madagascan vanilla help round and soften the finish
