McLeod's Scottish Wee Heavy or Strong Scotch Ale incorporates their house English ale yeast and rich, caramel-laden malts. A touch of rye rounds out the native Horopito which lends soft, evergreen notes to the finish. Vinification

All fruit is estate grown organically, with the majority of the clone being Mendoza. All our Chardonnay is hand harvested and whole-bunch pressed,
but they are lightly crushed first, this allows the juice to be extracted at very low pressures. Each parcel of fruit is kept separate and vinified and aged
individually. The juice is allowed to oxidise pre-ferment which makes the final wine more vibrant, long-lived and intensely flavoured as finished wine.
All parcels take most of the lees from pressing to barrel for wild fermentation and are aged in French oak with 25% being new. To keep the structure of
this wine, we allowed only 50% of the barrels to go through spontaneous malolactic fermentation, with no battonage. The total time in barrel is about
10 months before being combined into one blend in mid-February, The wine stays in stainless steel tank for 6 months on lees which allows for the acid
to become precisely defined and adds texture - then finished with no fining and only gentle filtration.

Wine
Green gold with silver flecks.
Aromas of grapefruit, orange zest, grilled white stonefruits, chared applewood with underlying peach blossom and oystershell.
Fresh citrus dominates with crunchy nectarine, crystalized pineapple, sweet baking spice and a saline minerality in support. A fine acid structure is
coated with a silky texture to give a long complex finish.

DISTILLATION PARTNERS “There’s some peated Glenturret in there, a bit of Caol Ila, Glenrothes, Ben Nevis and some “Dalrymple” (a tea-spooned malt from the Ailsa Bay Distillery).” 

MATURATION Oloroso Sherry Cask

SENSORY Deep mahogany with a rich Oloroso Sherry seasoned oak nose. Hints of cigar box, dried raisins, dark plums and festive spice. Palate shows charred Christmas cake ends, cigar box, gingerbread, burnt orange peel, smoked bacon. The finish is long, warming and lingering, balancing barbeque smoked meats with brown sugar, ginger and cinnamon.

CIGAR PAIRING Maduro’ (meaning ‘mature’ in Spanish) cigars are made from extra fermented and slow aged tobacco leaves and tend to be sweeter and darker than others. The Whisky Cellar’s Keith Bonnington suggests: 

1. Padron 1926 Series No. 35 Maduro (notes of coffee, pepper, cedar wood, leather and caramel) 

2. Cohiba Black Robusto Crystal (notes of cocoa and coffee) 

3. Camacho Triple Maduro (notes of earth and spice). Equally good with a cup of freshly brewed Arabica coffee, a densely sweet after-dinner dessert or a piece of dark chocolate (the minimum 70% cocoa fat version).

Pet Nat! A co-ferment of all of the Chardonnay and Pinot Noir grapes we harvested at Netherwood, bottled whilst fermenting during the 2022 harvest. A rare wine and vintage. Rose gold-apricot hue. Effervescence aromas with white peach, apricot and subtle honey notes. The palate is vibrant, fresh and steely with a fine mousse and lingering crisp finish.  Dry (extra Brut) and alive. Zero sulphur.

Kaiserdom Beer STRONG 8.2% Can 440ml

PRODUCT OF GERMANY. Kaiserdom Beer STRONG 8.2% is a full-bodied German lager with a bold malt character and a smooth finish. This premium beer is perfect for those who appreciate a stronger, richer brew. Available in a 440ml can.

Distilled in 2009, this 12-year-old Glendullan has been aged first in Bourbon casks and then in Côte-Rôtie casks from the Rhone Valley in France. Expect some clean vanilla and green apples from the Bourbon, matched with red fruit notes from the red wine cask.

Pilsner, 5.0%

Rice Magic Sparkling Red is a naturally sparkling sake produced by the fermentation of pure rice and rice malt in the bottle.

It has a combination of natural sweet and sour flavors without the use of any additives. It is a sparkling sake made with "Yume no kaori" (name of rice from the Fukushima prefecture) and ancient  "Asamurasaki" black rice. Due to the highly nutritious anthocyanin found in the black rice, it was considered to be the "rice of longevity" and was given to the Chinese emperor in ancient times. Rice Magic RED has very fine bubbles and a gorgeous pink color, which comes naturally from the rice.
