After meeting at NZ hop harvest and geeking out over NZ hops, brewing process, and the importance of water, Dan decided to fly home via Sydney and help us replicate something as close to the rolling green hills of Vermont as we can get. With a huge focus on water, we’ve done our best to replicate the soft, cloud-like aqua of the North East using our in-house RO water system, along with a metric bucket load of fresh NZ hop cones to complement this big, juicy, hop-to-face-smacking lupulin monster. It is then dry hopped it with Citra and the largest dose of Nelson to date and just a touch of lactose to really elevate its already velvety feel. Upon pouring, mocha-colored bubbles cascade to quickly turn into an off-white bright head sitting on a near black silky body releasing notes of roasted coffee, milk chocolate, light toffee, and just a hint of floral and earthy hops. Following a long boil of our base stout, we added a healthy dose of pistachios, honey, cacao nibs, and cake mix.
