Unit price perYalumba is a family owned and fiercely independent wine producer with roots back to 1849. This is their take on the classic Australian blend of Cabernet Sauvignon and Shiraz.
The Cabernet Sauvignon was sourced from four vineyards in the Barossa Valley. The diversity of the vineyard selection provides the rich, lifted Cabernet Sauvignon aromatics and palate structure for which The Signature is renowned. The Shiraz comes from vineyards of varying age, with the oldest planted in 1925. These blocks are of sandy loam, featuring yellow sand and ochre clay over red clay. The combination of these Barossa Valley blocks provides a Shiraz with sweetness, fullness, depth and layers of complexity.
Matured for 19 months in 25% new French barriques and Hungarian hogsheads, balance in older French and Hungarian barriques and hogsheads.

Unit price perEntity is 100% Syrah, sourced from old vineyards in the Krondorf, Eden Valley Light Pass and Ebenezer regions of Barossa. This wine was made with minimal intervention to create a traditional and elegant wine which represents the Barossa Valley. This wine is approachable in its youth, but its excellent structure allows it to benefit from cellaring.
The wine itself is deep purple-red. The nose is fruity, spicy and savoury, with notes of ripe dark berries, cocoa and spicy oak. The palate is concentrated and fruity, coupled with bright acidity and a long smooth finish.

Unit price perHere's a great little red blend from Antinori, which is a gorgeous expression of the insanely beautiful Tuscany region, but which is made from an interesting mix of Italian and French grapes. Sangiovese leads the way here with small quantities of Cabernet Sauvignon, Merlot, and Syrah, all grown in Tuscany.
Antinori's winemakers describe this wine as firm bodied on the palate, supple with velvety tannins and a long, savoury aftertaste.
Nautilus Cuvee Brut is inspired by the richness and depth of Bollinger Special Cuvee, which in turn takes its inspiration from Pinot Noir - which provides the toasty depths of flavour, along with three years ageing on lees in bottle, before release. The result is a dry, full bodied, deliciously yeasty sparkling wine is a blend of 71.4% Pinot Noir and 28.6% Chardonnay. All grapes are hand picked, fermented with a champagne yeast with only the first run of juice going to fermentation to retain a fineness in flavour and texture. The fruit for this wine was grown on the upper terrace at Askerne Vineyard and is predominantly Clone 14 Semillon. It was handpicked then whole bunch pressed, lightly settled and transferred to barrel. 100% barrel fermented with a mixture of wild and inoculated yeast, the wine was then aged on its lees for 18 months prior to blending and bottling. Final blend has a 33% new French oak component and the balance 2nd fill.

TASTING NOTE
Bright aromas of lemon, fresh tangerine and tropical pineapple with mineral notes and hints of scented oak spice. The palate is rich and textural with concentrated lemon and stonefruit flavours on a backbone of bright zesty acidity which gives a wonderfully long finish.
