Unit price perOccasionally we can get our hands on some of this magical fruit. Grown in Northland, cherimoya - also known as the custard apple - has a soft, sweet aroma and delicious creamy pear like texture. We added them to a mixed-culture saison base for six months then removed the fruit and added fresh sage leaves for a few more months. This was then blended with a barrel-aged Hefeweizen for a truly unique and special brew. Aromas of sage and clove with notes of lemon and fruit-driven funk dominate with a palate both clean and bright over tart lemon zest-laden sourness and a dry finish. With so many layers of complexity, this beer will age well for 4-6 years.

Fifteen years in virgin oak has resulted in a rather cask forward profile, with aromas of toasted hazelnuts and milk chocolate opening up on the nose, followed by grilled honeycomb, vanilla sponge cake and hints of fresh pineapple and crisp green apple. The palate is initially rich and sweet, with notes of butterscotch, salted caramel and drizzles of heather honey, followed by vanilla and treacle. Versatile, refreshing and incredibly age worthy. Chenin Blanc is one of the great grapes of the wine world for all these qualities and more and this one is made with grapes grown on Ian Quinn’s Two Terraces vineyard in Mangatahi, Hawke's Bay. Quinn, the grape grower, is an unapologetic devotee of Chenin Blanc, which he supplies to several passionate winemakers, including Gordon Russell of Esk Valley.
Russell ferments this Chenin in stainless steel, maturing it in a concrete egg for six months on fine lees. It's dry in taste and literally just off dry in style with residual sugar of 5.8 grams per litre.
New Zealand’s climate is exceptionally well suited to this stunning classic French white grape variety, as winemakers such as Gordon Russell of Esk Valley, has shown for decades through his passionate perseverance with this lively white grape.
Chenin Blanc is one of the world's most versatile grape varieties because it can be used to make bone dry, full bodied whites, which both France and South Africa specialise in and it can also make super succulent sweeties. The grape's naturally high acidity adds balancing freshness to wines made from it, which retain a brightness and lively style.
Bouquet: Bright and vibrant with ripe fruits, primarily dark plums and blackcurrants, with a hint of raspberry coulis and coffee mocha oak.
Palate: Rich blackcurrant and raspberries. Crisp, clean acidity and delightful tannin structure leading to a lingering finish.
About the winery...
Six generations have nurtured some of the most historic vineyards in Australia.
In 1839 William Formby arrived in Australia from the United Kingdom and it was in 1882, after four decades pioneering South Australia, he purchased the now historic Metala estate.
In 1891 William and his son, Arthur, planted 21 rows of Shiraz, and 14 rows of
what are now the oldest family-owned Cabernet Sauvignon vines in the world.
In 1894 a further 5.4 acres of Shiraz were planted. After almost five decades making Metala wine in a purpose-built winery on the estate, the winemaking was transferred to Arthur’s Brother-in-Law, at Stonyfell Cellars. The wines continued to be made here until management shifted to various holdings beginning with Dalgety Wine Estate in the early 1970’s.
In 1981, 5th Generation Guy Adams took over the management of the mixed farm estate. With a sincere appreciation and respect of viticulture and to family legacy, Guy, together with his wife Liz, began a 20-year long battle to return Metala to its original home. In 2022 the dream became a reality and Metala came home to Langhorne Creek and the family who planted and have nurtured the vines for more than 130 years.
