An ongoing series of occasional one-off releases inspired by the nice ideas captured in our Lyall Bay Brewery.

This whiskey is 51% rye, 45% corn, 4% malt, and 100% genuine. Bottled at an honest 90 proof, it’s a real straight shooter.

Tasting Notes:

Hints of chocolate, leather, vanilla, and spicy grains, balanced by slightly sweet and oaky tones.

Leather, citrus, oak on the nose. Rye, cherries, and smoky caramel on the palate.

Bärenjäger Honey Liqueur (750ml) is a premium 35% ABV (70 proof) German liqueur made from natural honey. Originating from an 18th-century "bear trap" recipe, it offers a rich, thick, and authentic honey flavor, often used as a cocktail sweetener or enjoyed on its own. It is commonly used in hot drinks and for autumn-themed cocktails.

Goisot Côtes d’Auxerre Rouge 2023 shows a vibrant, cool-climate Pinot Noir profile with bright red cherry, wild strawberry and subtle cranberry fruit. Fine floral notes of violet and rose sit over a distinctly limestone-driven mineral backbone. The palate is fresh and elegant with fine tannins, lively acidity and a gently savoury, earthy finish that reflects its northern Burgundy origins region.

From 1.15 hectares of southeast-facing limestone vineyards planted between 1970 and 1994 at 820ft elevation, this elegant wine matures for 9–10 months in oak, with 25% new barrels. Delicate and refined, it offers bright fruit-driven character and graceful structure. Approachable in youth yet capable of short-term cellaring, it pairs beautifully with Charolais beef.

The David Moreau Santenay Rouge 2022 is an elegant, medium-bodied Pinot Noir from Burgundy. It features vibrant red berry aromas (cherries and crushed strawberries), earthy mineral touches, and a refined, graceful structure. It offers a perfect balance of bright acidity and fine-grained tannins

The Marchand Tawse Marsannay Rouge 2022 is an expressive, organic Pinot Noir from the northernmost appellation of Burgundy's Côte de Nuits. It features ripe red fruit profiles like strawberry and red plum, balanced by fine spices, velvety tannins, and a signature mineral, saline finish.

RUTHLESS WEST COAST IPA

Boneface's Fresh Hop face-off pits the flyest of this seasons hop crop against each other in a Lupulin battle royale.  The 411 on Ruthless is Riwaka in extremis, a dose of grape-fruit and lime we'd conservatively describe as hella with dank overtones. The look is pure gold with a tigh'n'white head, unafraid of it's own bitterness. No diggity, or certainly very little.

NOTORIOUS EAST COAST IPA

Boneface's Fresh Hop face-off pits the flyest of this seasons hop crop against each other in a Lupulin battle royale.  Notorious busts out in an east coast style with Nectaron additions we can only describe as off da hook. Passionfruit and stone fruit step, luscious but not too sweet, knockin' boots with the soft and pillowy mouthfeel. Tight.
