Unit price perAfter visiting Cobram Estate during olive harvest, Four Pillars realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.
The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot.
They have used olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. This gin is savoury, textural and bright. Perfect for any Martini - Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gintonic, with rosemary and lemon.

All of the grapes that go into Greystone wines are 100% certified organic with BioGro NZ and all are estate grown. No additional fruit is purchased to supplement production, which is one of many incremental steps that go into Greystone's high quality wines.
This impressive Pinot Noir is the top of the Pinot tree at Greystone. It's made from fully destemmed whole berries which were cold macerated and fermented with wild yeasts, 25% of the wine having been fermented in small tanks amongst the vines, which ensures a completely wild vineyard yeast fermentation. The wine is bottled without fining, filtration or cold stabilisation.
It drinks well now but will reward those with patience to wait for it to develop further with age and has the potential to evolve positively for up to a decade, if kept in good conditions.

About Greystone
The Greystone wine story began in 2000 when the Thomas Family bought an old sheep farm on the Omihi hills in the Waipara Valley, North Canterbury. The rolling limestone hills lured this family in and their goal was a single minded one: to make great wines from the limestone rich soils here. Fast forward 20 years and Greystone is one of the great (and, some might say, yet to be fully discovered) wineries in this outstanding wine region. Not least due to the work of winemaker Dom Maxwell and general manager Nick Gill, who began working together in 2005 and has grown along with the brand and quality.

Starward age Fortis in 100% American Oak barrels to give a full, rich taste that enhances the toasty oak and vanilla characters of the whisky. Fortis also boasts juicy red wine characteristics thanks to barrels from mostly Barossa Valley wineries, which once held powerful shiraz and cabernets. Some barrels are charred for complexity, most are fresh, lending Fortis the intense red wine flavours that soaked into the barrel staves. They don?t chill filter this stronger release to closely represent the whisky that comes from the barrel.
A rich, full-bodied flavour balanced with the approachable velvety smoothness Starward whiskies are known for. Expect upfront notes of Madagascan vanilla pod and toasty oak. The palate is all chocolate ganache, cinnamon, quince and Muscadelle raisin with a lingering baking spiced finish.

Distillery Information
Originally opened on Derby Day in 1935 and reopened to the public in 2014, the Stitzel-Weller Distillery is one of the true cathedrals of the American whiskey industry. Located only five miles from downtown Louisville, the Bulleit Frontier Whiskey Experience is one of the most convenient and impressive stops along the Kentucky Bourbon Trail.
About this Whiskey
This second batch of Bulleit Bourbon Barrel Strength is crafted from a mash of corn, rye and malted barley. After the grains are harvested, they are mashed and fermented with a unique strain of family yeast. Following fermentation, the wash is distilled through a copper still before being matured in charred, American oak casks for six to eight years. "Once we're done with the barrels, they're sent over to Johnnie Walker where they'll age the blended scotches," says Bulleit. Proofs range from 118-125.4.
Nose: Brown sugar, caramel, tropical fruit and rye spice on the nose.
Palate: The palate is a clean, with sweet and spicy, notes, followed by vanilla chocolate and subtle rye.
Finish: Smooth and drying with lingering toffee notes.

Unit price perCastello di Verduno is an historic Piemontese estate that makes classic Barolo and Barbaresco from prime vineyard sites in both appellations. The winery is located in Verduno, the northernmost commune of Barolo.
For their Barbarescos and Barolos, winemaker Mario Andrion prefers 30 to 40 day macerations and extended aging in large Slavonian botti. Their varietal wines see mostly stainless steel aging, with some large botti.
This wine is 100% Nebbiolo grown on Marne di Sant'Agata, which is a combination of sand, clay and limestone. Hand harvested grapes were fermented in stainless steel for 20 days with periodic punching down of the cap, prior to 18 months in large traditional Slavonian oak with three months resting in stainless steel and another 14 months ageing before release.
