Night Spirit Imperial Stout is a luscious black ale that has been aged more than 10 months in whisky casks that held very special NZ single malt whisky for more than 20 years. The casks have a great story to tell and amazing flavours to contribute to the beer.

Originally these American oak casks held American bourbon from J. T. S. Brown and Sons (now Heaven Hill) and were coopered in the early 1960’s. The resulting beer is deep, dark, and intense in flavour with notes of oak, roasted barley, black malts, vanilla, and whisky.
There were a very limited number of NZ Whiskey Co. barrels, and we can coax the whiskey character out of a barrel and into a beer only once. After that, the barrel may offer oak flavour, but the whiskey character is essentially lost. Each bottle is hand numbered. The 2017 release is sold out. Annual releases are planned for 2018 – 2021 and supply is very limited.

Count yourself fortunate if you are lucky enough to get your hands on some of these bottles. It is a unique experience which can’t be repeated and the beer will age gracefully for years. We expect the sweet spot to be around 3-5 years. Do not serve cold! Treat it like a port or red wine and serve it in an elegant glass.

While insipid bootlegged ales were axed by the pious, sly grog shops and speakeasies continued to serve the good stuff. Those in the know indulged in tipples made all the more sweet by their illicit nature, like this richly textured Prohibition Porter. Secreted in charred oak bourbon barrels it envelopes your tastebuds in chocolately brown malts before steamrollering them with a heady amalgam of oak and caramel.

A classic oatmeal stout dry hopped to fuck with the finest US grown Amarillo. Big Orange-citrus hop character, robust bitterness, classic coffee and cocoa.

5.0% ABV.

Brewed in unholy alliance with Robinsons Brewery, this premium British ale (4.7% ABV) storms your taste buds with a commanding blend of Bobek, Goldings, and Cascade hops, delivering rich malty undertones and a devilishly crisp citrus kick. Irish Whiskey Cask matured Scottish Stout. Scotland is renowned for making whisky, Ireland for making stout. This beer brings together and celebrates both nations by turning that convention on its head.
Jet black in colour. Aromas of dark chocolate, espresso and vanilla, with a full malt character. A beautifully balanced bitterness gives way to a long, chocolatey finish.
Mellow, complex, and decidedly different from the usual.

Matured in bourbon barrels this Imperial Porter gives rich flavours of toffee and dark chocolate. A bottle conditioned warming, robust ale.

Medium and balanced aroma. A roast character with subtle fermentation fruitiness. A perfect rounded flavor of bitter and sweet. A smooth palate with a slight bite leading to a dry finish. Distinctively black full bodied liquid with a rich creamy head.

Cabbages & Kings Stout 12%

The Walrus did beseech. Cabbages & Kings, Imperial Oyster Stout, brewed with the more or less willing assistance of ten dozen fresh Te Matua Bay Pacific oysters, Horopito and Manuka smoked malt. Dark, certainly - and rich with just a suggestion of brine, a touch of smoke and a hint of native New Zealand pepper leaf.

Blackshore is a smooth, easy-drinking stout, named after the black-tarred fishing huts that line Southwold's harbour. They are individual, characterful and made of sturdy stuff. It is brewed with a hefty mash bill for a rich, broad malt character. You’ll find Pale Ale, Brown, Double Roasted Crystal, and Chocolate malts, alongside Roasted Barley and a hearty helping of oats. This adds a real depth of flavour, that the brewing team are particularly proud of, making it tremendously tasty, but mellow on the finish.

Born with a rugged smoothness, this beer stands out like a Grizzly on its hind legs. The lightly burnt malt character that delivers chocolate coffee mocha flavours neatly combines with a bit of grainy, dark malt dryness on the finish. Add to this aging on bourbon barrel wood to further enhance the smoothness and bring faint vanilla aromas, and the rest is magic. So satisfying that it brings a session-ability that is hard to resist. Beware the Grizzly, he may sneak up on you! 6% ABV
