A wonderful expression of Bushmills single malt. This is the second release in the Steamship Collection and it was fully matured in Ruby Port Casks.
Nose: Ripe red apples, chocolate aromas, a hint of red wine booziness.
Palate: Damson and honey, followed by drying touches of cacao and cinnamon.
Finish: Juicy red berries and spiced fruit compot
An indulgent smooth single malt matured in American white oak ex-bourbon casks and aged Tawny Port pipes. These casks were sourced from well-known port producer W&J Graham's
Nose: Clove-studded orange, raspberry and prune.
Palate: Chocolatey at first, before waves of dried fruit and stem ginger notes appear. A touch of earthy bitterness develops later on, balanced by runny honey.
Finish: Roast chestnuts, gingerbread and tobacco.

The Charles Wiffen Pinot Gris, is grown in the “Home” Block, which surrounds the Homestead on the farm, which was built in 1882. The block is spur pruned, with a targeted yield of 9 tonnes to the hectare. The grapes are machine harvested in the cool of the morning, transported to the winery, where it is gently destemmed, pressed and clarified. The juice is then fermented with selected yeasts, with the fermentation stopped at the desired residual sugar content.
This estate grown Pinot Gris exhibits aromas of beurre bose pear, hazelnut and white lily with hints of meyer lemon and rosewater on the palate and is refreshingly textured.

Unit price perTerrantes is one of the noble Madeira grapes offering a medium dry style. The base wine is fortified to 17-20% and stored in “estufas” which are heated to 45 degrees celsius for no less than 3 months.
A brilliant, deep gold colour in the glass that then offers aroma of dried fruits, raisins, hazelnuts and walnuts. The palate is medium dry with flavours of almonds, dried fruits and spices with impeccable acid balance.

Plantings of this grape declined in the 1990?s in favour of the more expensive, easier to market Barolo and Barberescos. It came down to money, not quality and quietly the wine world mourned. Luckily a few faithful enclaves remained faithful to the grape like in Dogliani just south of Alba.

Unit price perFour Pillars - Our Sherry cask solera is made up of 42 casks, some from Spain and some from one of our mates who makes famous Australian fortified wines, historically known as "Australian Sherry" and now known as Apera.
They’re much older than our Chardonnay barrels, varying in age from 15 to 35 years old. These barrels were first filled more than a year ago, and this is the first solera release taken only from the bottom row of barrels.
Slightly deeper in colour, this is a rich, intense and layered barrel aged gin. A pine needle quality underpins some amazing complexity. The residual Sherry and Apera characters have integrated beautifully with the deeper cassia and star anise flavours - think dried fruits and nuts.
The addition of some Spanish Amontillado Sherry has added some length and sweetness to the final gin.
